  1. I’ve come far in converging on the optimal solution on sauce, cheese mixture, dough prep quantities, olive oil timing and bake method. This shit is fun. Can’t wait to host people and blow them away. Adding grilled chicken pieces has taken it next level. Waiting on arrival of 00 flour today to see what difference that makes.
  2. First time making pizza from scratch. Wow even though I need to tinker with the sauce recipe the results of fresh pizza crust blew me away. A few iterations and I’m going to be dangerous.
  3. In a brisket kolache? Yeah I wouldn’t say that’s much of a stretch... I’ve had billions of rolls stuffed with brisket and bbq sauce in my life.
  4. My kid and I have been baking shit lately to try to get him off the games so this is another good option. I wanted to say for your pico idea I would think that it would taste much better if you keep it like you did but afterwards cut a slice into them then you can add pico or bbq sauce or whatever suits your fancy. If you add the pico before the cook it's gonna make the pico soggy and hot which isn't as appetizing as fresh cool pico with crispier tomatoes and jalapenos. Just a thought!

  6. Oh my god. It's like i've watched my own son grow up. I've watched your first pizza attempts on here when you were but a wee little lad. They weren't great but I was proud of you for trying. Now you're stunting on hoes. How does one replicate this dough and baking method? I need this in and around my mouth.

  11. Wouldn’t the same be true in an oven with regards to losing heat because you have to open it to move it around or are you heating up a stone then using the broiler and cooking it in one go without any movement or door opening?
  12. Thanks. I went a little happy with the pickaxe and to be honest it was hard to find the outer perimeter of the big ole pieces so i was kind of hacking around looking for it to dig in the pickaxe and dig it out like a fulcrum. I figured either way with this Texas heat it would be hard to get the same piece to survive on top after having experienced the shock of being dug out. Oh well, I don't mind it looking bad in that spot for a while till spring time since I also am killing off a tree trunk that a tornado left after it ripped out my tree. So the lawn basically has a big under construction sign out front lol. Thanks for the suggestions on the wetting agents, that sounds cool i'm definitely going to try that. And maybe look into a soil sample tool and find out where to send those off to see what I need. Also i considered aerating now and dropping in some peat moss and sand but I figured with this heat I might just provide holes for moisture to escape too quickly.
  13. Figured out why one section of my lawn felt hard and clay like and never grew nice grass. Found a huge section of chunks of concrete that the builders must have poured out. Excited that by next spring I’ll start growing new grass that stands a chance.

  15. Puerco guisado with chorizo refried beans and flour tortillas. Fuck this was spicy AF. First time making it. Nearly killed everyone in the house attempting to toast chiles de arbol.

  19. Yep. I’m in Keller just north of it. Closest Mexican meat market (used to be). Now it’s Super Mercado Monterrey a little south of that.

  21. It looks like it came out absolutely perfect to me. That's how my bark comes out too. I don't trim it as much as well but you did trim it closer to Aaron Franklin's preferred shape than we all do. He really has to worry about aerodynamics around the brisket since he's making tons of them and can't baby them but I can baby mine and it's cooking in a different type of smoker.

You can tell you know what you're doing as far as the steak is concerned because it's obvious it's not overcooked if the edge piece is that color and there's a garlic on top so it's obvious you basted it with butter and garlic. It was probably a great steak. It's just the other stuff that really messed it up. The camera sucks balls. The angles and lighting in the first phot were bad. The second photo just looks like it's the camera's fault. The only thing not related to that is the freaking money shot slice you chose. It looks like you bit the tip of the steak instead of slicing it like most do for a money shot.
  23. Thank you! What would you add as organic matter after core aerating the whole yard? I will kill the stump like you said before I put more soil and sod over the ground stump. It's under ground but I figured it would still sprout nasty seedlings if I didn't kill it. On a separate note I have a small area maybe 3 x 3 near my driveway that has eroded. If I want to level it off should I till up all of the existing grass and then add more dirt then add sod over it? I didn't know if I just added dirt over grass then sod if the upper grass would have a hard time growing roots through the existing grass once the roots grew past the dirt.
