  20. I like to smoke them for 3-4 hours, then put them in a steam tray pan with onions and Hatch chiles. Add beef broth to cover the onions/chiles on the bottom of the pan, cover with aluminum foil and then back on the smoker or in the oven to braise for a couple of hours. Shred the beef, de-fat the drippings and make gravy or just use as au jus.
