  5. Yes. There is lots of money involved in keeping the post-prohibition status-quo in place. Three-tiered distribution system, limited on-site sales at breweries, vineyards, distilleries. Attempts to limit chain liquor stores and online or mail-order sales. One of my favorites is the TABC rule that you can't make alcohol seem to be "appealing" -- hence, it's a violation to advertise or promote beer as "cold beer."
  6. It's almost always the right decision to support whatever Bill Bunch opposes when it involves things downstream of the Springs that he's allegedly saving.
  7. Good thread. Just a point about prepping a company for sale. A strategic buyer is going to be less concerned about well-documented systems and processes, succession planning, etc. They will just be looking at how easy or difficult it will be to bolt-on the acquisition to their existing platform. Whereas all of those at systems and processes, etc. documentation will be likely very important to a financial buyer. They will be looking for the ability to replicate, scale and grow the company based upon the additional capital they are providing, hopefully without having to get their hands too dirty beyond inserting a CFO that they trust and having board-level involvement. It seems that they almost always have a 5-year timeline until they intend to achieve an "equity event." So they will pay a premium for a company that is ready to hit the ground running, so to speak.

  9. It always makes it seem more realistic if they take the ear tag off of the livestock before they release it from the pen to allow you to "harvest" it in the wild.
  10. Who am I to judge the knowledge of these giants of Cajunhood? But putting shrimp in your roux so far prior to adding in The Trinity and additional stock and veggies just seems wrong. Shrimp is one of the last things I ever add to a seafood gumbo. Who needs a bunch of over-cooked rubbery shit in their gumbo?

  14. Better said, Dallas retreads and chains in downtown/central. Del Frisco's Double Eagle, Bob's Steakhouse, The Capital Grille, Texas de Brazil, Eddie V's, Ruth's Chris, Silver Fox, etc. seem to be where lots of business meals happen. And that's usually what I'm doing when I'm in Fort Worth. I love the old standbys like Angelo's, Railyard, Joe T's, Cattlemen's Steakhouse, and The Original Mexican Eats downtown. Sounds like there are more places that I should explore. Thanks for the comment.
  15. That's a shame about Reata, it was great before they had to move to the Caravan of Dreams spot after the tornado. I really miss the puffy tacos at Caro's on Bluebonnet Circle. Also the CFS at Massey's on 8th Avenue. It seems like many of the nicer places in FW are simply Dallas retreads.

  20. Burnet Road just morphed into 1325. Pretty sure that Parmer didn't extend that far west. It was all just a bunch of dairy farms out that way until IBM built their plant in the mid 1960s (to build Selectric typewriters -- very high tech!). Gracywoods is named for the Gracy family that had a big dairy operation out that way. @Armybrat may have a better recollection than me -- he was driving cars and chasing tail when I was still riding on a yellow school bus!
