  16. Roll, sauce, cheese and freeze. No cooking. Then bake, do gravy and more cheese. They just seem to stay together better.
  17. I'm usually full of shit, but on that subject, I've started to make my enchiladas in shallow aluminum pans and then immediately freeze them. As I've said plenty of times, I am a NEISD enchilada devotee. There is just something about freezing them that keeps it all from being a big gooey mess when you later bake them and put the enchilada gravy on them. I'm convinced that all the old traditional Tex-Mex places did it this way, hence all of the "no substitutions" and "the plate is hot" admonitions.

  19. We've had around 3 inches so far this new year at our place between Menard and Eldorado. As our ranch foreman is fond of saying, "the place has it's Sunday suits on." There has been no livestock grazing there the past two years due to drought. Not sure if that will change this year.

  23. You are not wrong. Pre-covid, I questioned what was driving market valuations, so I put together a small play portfolio in my non taxable accounts of stocks that had solid dividend histories. 75 percent of them stopped paying dividends. The valuation didn't change all that much. Crazy.
  24. Waikiki is basically Las Vegas with beachfront. There really needs to be some sort of licensing authority to permit whether the large European men and women are allowed to wear Speedos or bikinis there!
