  2. Stay away from the US postal service for any payments by check. I handle business affairs for my church and we ended up moving our mail delivery from our physical address to a P.O. Box due to all of the mail theft and check-washing that we experienced.

  19. Roll, sauce, cheese and freeze. No cooking. Then bake, do gravy and more cheese. They just seem to stay together better.
  20. I'm usually full of shit, but on that subject, I've started to make my enchiladas in shallow aluminum pans and then immediately freeze them. As I've said plenty of times, I am a NEISD enchilada devotee. There is just something about freezing them that keeps it all from being a big gooey mess when you later bake them and put the enchilada gravy on them. I'm convinced that all the old traditional Tex-Mex places did it this way, hence all of the "no substitutions" and "the plate is hot" admonitions.

  22. We've had around 3 inches so far this new year at our place between Menard and Eldorado. As our ranch foreman is fond of saying, "the place has it's Sunday suits on." There has been no livestock grazing there the past two years due to drought. Not sure if that will change this year.
