  4. We have a lifetime supply of these from when we got take-out pho twice a week during the pandemic frenzy. So perfect for freezing chili gravy and stock.

  6. I love canvas tents. The nylon ones are so noisy flapping in even the slightest wind -- hard for me to sleep. I am a fan of single pole canvas tents like this: Not fancy, but tried and true.
  7. I'm not much on the tortilla steaming either. I assume that is because of really big batches. That is why G-d created large griddles -- to heat up corn tortillas for enchiladas. No problem on freezing the chili gravy. I have maybe 4 quarts ready in my freezer. NEISD is definitely the way to go, but I miss Dart Bowl! I've been looking at restaurant supply stores for those metal plates and the insulated bases. Around $12 per. I may need to make an investment.

  11. I heard a story at a CLE event today about a CPA firm that had their invoicing system hacked. The hackers sent out past-due notices demanding immediate ACH payments for current invoices (The narrator: the CPA firm was not set up to accept ACH payments). One client was so pissed about it that he sent the ACH payment (to the hackers) and promptly fired the CPA firm for being such dicks about payment terms! Bad situation all around!
  12. The North Loop store (RIP) was my jam as a kid. The Airport store was more of my late night drunk college guy jam. I've heard mixed reviews lately. Hope that they get their shit together.
  13. I'm really having a hard time working up anything cloudy for the demise of The Pig Stand. Fine for it's time, but there is lots of better food out there these days.
  14. There is some really sophisticated stuff going on out there (Brat's wasn't all that sophisticated) -- but I've seen cites that something like 90%+ of it relates to organized crime. They don't fuck around. If it wasn't immensely profitable, they wouldn't do it.
