    With respect, you are missing the point.  The whole idea of a dinner club like that is to make the effort to explore and do something fun for the group when you are hosting.

    Depending on the main, my appetizers will likely be smoked salmon dip with a cheese tray or boiled shrimp w/ cocktail sauce and sautéed crab claws cooked in Bolner’s BBQ crab seasoning.

     

    I would like to do as much prep work as possible the night before.

     

    I thought about making homemade pasta and a bolognese the night before. I would just have to let it simmer in a pot and boil the pasta before dinner, and it would free up time to socialize with guests. Logistically, it seems like the best idea, I’m just not too excited about it.

     

     

    Any other ideas?

     

    We have a great backyard and will do this outside, with lights, white table cloth, full bar, etc.

     

    Realize this is a narrow request, welcome to all other dinner party ideas as we are in a new house and plan on entertaining a lot.

    Easiest nice dinner party we ever did was Cornish game hens with some kind of a sauce, served on a wild rice pilaf with a bed of arugula and such stuff, along with oven-roasted asparagus spears.

    Virtually all the prep/cooking was done the night before and we just popped stuff into the oven once the apps and cocktails started flowing.  Wife and I excused ourselves for a few minutes before meal time to plate the food, and fun ensued.

    No kidding, there.  The timber producers aren't seeing anything remotely equivalent to the bump in lumber retail prices (which have come down lately) -- our family forester attributes the price rise largely to distribution/supply chain issues.  He's shown us lots of pics of sawmills in East Texas and Louisiana with gobs of finished lumber on hand that is waiting for rail or truck transport.

    We do have some local LEO's that we are friendly with.  We'll be doing a couple of youth hunt weekends with them and they also have some needy/hungry locals that could use the meat.  We'll get it done.

I promise that I have no personal or financial interest in these guys, but Hunter's Creek on US 183 north of State Highway 29 is by far the best game processing place that I have ever used.  Totally transparent processing room -- you will definitely be getting your own deer, cant say that about some other processors I have utilized.  They have a 24-hour automated way to get your game in.  Their sausages (especially the maple pan breakfast sausage) are really good.

    It is a really cool heritage ranch.  This lease is about 1/25th of what the family originally owned.  Texas is getting chopped up via probate courts and such.

  9. My group has a new 12+ section lease this year (has not been hunted in the past three years) and we are under orders to kill every pig and exotic deer on sight.  (We killed a big hog last weekend!)

    Plus, we had to make a commitment to kill 75 doe this season -- we have lots of work to do.

FWIW, our family has some East Texas timberland.  Our forester has recently advised us about a big change in his approach to timber management.  He has moved from a 35 year to a 25 year management horizon.  He says that almost nobody is interested in anything bigger than 2x4s these days, and if they want something bigger they will use the smaller boards and adhesives to make what they want.  I don't know if this industry development has anything to do with the change in valuation, but obviously a 25 year horizon vs. a 35 year horizon would impact the valuation a bunch.
