  2. I’ve taken over as the omelette chef in my house because of this. Easily the best omelette I’ve ever made on my first attempt on the griddle.
  3. Trying to find some new spots to take my kids and meet up with a friend to have a drink, while the kids can have something to do. The usual suspects for this type of place for us are normally Stomping Grounds or Preslee’s, but looking to find some new ideas. Anyone else have other go-tos?

    Is Juarez that much better than Chavez? When we lived in spring branch we’d go to Chavez just because their building was a little nicer lol. Will be disappointed to know if I missed out for those four years.
  5. Yeah that was jarring in the first few min of episode 1. Mac and Dee both had a shit ton of work done on their face recently and it’s off putting. Real Mac would never.
  6. HEB subbed my snapper for rockfish, but it still went well with the mango salsa. Served with some quinoa salad my wife made. Slammed, went hard, etc etc.

  8. This bitch was awfully pretty. No cut picks as I was feeding folks and ain’t nobody got time for that. I think I’m getting to the point where the next time I will really, really trim the edges, as that bottom left corner of the flat was dry as fuck and I no longer feel the need to keep something around that’s not enjoyable to eat. Thing thing cooked pretty fast. Put on at 11 pm, woke up at 6 to it already being at 190, but stalling. Made for a great bark, but I still wrapped and added my liquid tallow on the top side before doing so. 11.5 hours total for about 10.5 lbs

  10. 99% sure I did my honeymoon there. Nice place. My fam went to Cancun every summer as a kid and I got to climb that pyramid before they closed it off. Chichen Itza is bad ass.

I’ve yet to try the “icing” method, but when I made my tallow, I put it in an old olive oil bottle, stuck a nail in the top to make a hole for a squirt bottle, and when it’s time for wrapping I heat the bottle in a pot with a little water at the bottom (think warming syrup). The only real benefits I see over the icing thing is a) multiple uses from one batch bc the bag isn’t cut, and b) getting to squirt it over the brisket liquid style and manage where it’s distributed a little better. Lots of ways to skin a cat though.
  12. I am doing one tonight for my brother since he just had a baby and I don’t want to fuck it up… I don’t really see how it’ll make that much difference when the heat is coming from below so I’m just gonna stick with the tried and true butcher paper. Thanks!
  13. My FIL is heavily involved with UL athletics and the whole family went to UL for either undergrad or grad school, so this was a fun one for me. They’re a great fanbase regardless of sport, but their baseball fans still talk glowingly about their regional trip they took to Austin like 13-14 years ago and aren’t chickenshit assholes like LSU folks. Hope we see them in the last game.
  14. Has anyone done the foil boat thing on an egg style smoker? Any noticeable difference from just wrapping in butcher paper through the stall? Not sure if the effect will be the same on an egg vs an offset
  15. I don’t think it’s that unpopular of an opinion. If you calibrate your expectations properly you can have a good time, even if it isn’t Florida/the Yucatán/whatever other GOM beaches that have better water and sand. The biggest thing for me is that I have an almost 2 year old, and a 36-week-pregnant wife, and being able to knock out all the beach activities just 45 min from my house moves it up quite a few notches at this stage in our lives.
  16. FYI the 36” Blackstones with the hard lid are on sale at Walmart for about $300 right now. Picked one up for myself and plan to make the maiden voyage with PCS tonight
  17. Just gotta say, I fucking love Galveston. If I didn’t live in Houston I’m not sure I’d ever really make the trip, but it’s so nice having a beach town ~45 minutes away. Came down for a quick and easy baby moon/birthdays/holiday weekend and it’s exceeded all expectations. We normally just come for a day trip at one of the pocket parks, but got a condo on the sea wall for the weekend this time. A little further East froM the huge crowds, which helps. Didn’t even beach today but hit the naval museum, pleasure pier, and Gaidos and got my full on touristy day out of the way. If the beach (and it’s users) were s little prettier it would be the best gulf beach town IMO.

  19. Just by having some “well to do”/heavily involved in the community type friends in Longview that know that family, I think this tracks pretty well.

    I’m about equidistant from Pinkertons, truth, and B&R, but the biggest thing for me was that since had to take it to go, I was in and out in about 5 minutes. That type of quick trip isn’t really happening at truth/Pinkertons.
  23. Hit up Brisket & Rice today for lunch. Got some brisket, house sausage, and the brisket fried rice so my wife could also have some this evening. The sausage was good but not mind blowing, but the brisket was just fantastic. The fried rice with big chunks of brisket in it is something I could have once a week probably… it was perfect.
