I saw a video on Instagram from Malcolm Reed’s page where he was talking to some guy that said basically the longer the stall the more tender the brisket will be. Any truth to this seemingly junk science? My experience has been its way more about rest time than anything else.

I tend to cook around that temp and I’ve definitely hit stalls at really weird times before, but YMMV. Sometimes I’ll blow right through 160-170 and still end up taking around the same time. I can only think of a couple times where it’s actually finished in less than like 10.5 hours.

Thanks, that what I figured. I’m not fond of getting off the interstate in that part of Texas anyway as the last time we pulled over in Orange to let our dog (RIP) take a piss some hoodlums got in our car and tried to steal my wife’s purse, so that’s literally the only landmark in the area I could get her to pull over. Maybe when I take the day off and we can work it into being our lunch stop

What’s the line like at 1701 at noon on a Friday? That is usually when my wife and I are driving through Beaumont to get to her in-laws. I’f I can say that would be a short stop, I’d finally get to go (bringing a 2 month and 2 year old in tow changes shit lol)

I got to hear some of the inside baseball during Napier leaving UL for Florida a couple years ago through my FIL, and I guess good for him for getting paid but he should’ve stayed there a few more years IMO. They gave him the largest assistant pool in their conference by far, were willing to pay him whatever they could afford, and were super behind anything he wanted regarding facilities etc. Considering (I believe) one of his years was the covid year, maybe he couldn’t done well hanging around a bit learning more at a lower pressure job. my UF in-laws are tired of then carousel much like we are/were but this dude really is looking charlie strong-ish at this point. “This guy is supposedly a big time details dude and we will be cleaning up all the penalties”, yet they keep having drive killing penalties at the worst time. Looks familiar.

Upgrading in Oak Forest would probably be our ideal scenario, it just seems impossible to find something I’d actually want to buy and zoned to the schools we’d want that isn’t outrageous. Even a fixer seems so high that I don’t think I could justify it. It’s really just a question of mixing affordability, good schools, commute time, and reality. I guess at least we don’t have Austin prices 😅

Houston ‘burbs
I’m at risk here of starting this thread in the wrong place, but I figured this may be as good as any. Looking for some advice on some different areas on the edges of Houston proper… currently own my house in oak forest but with a growing family, I want a bigger house that’s not stupid budget-wise. We like some parts of Jersey village-ish (5-7 min up 290 from us currently) both inside and right outside the beltway. We have some friends about to move clear lake so I looked that up and was astonished to see I could get the same amount of house plus a pool for 200k less or so. I work downtown so basically anything more than 10 min outside the beltway is a no-go, but do any of y’all that are fr clear lake or other fairly close, comparable suburbs have any input? 550k is about max what I’d want fo spend but seeing the same thing (or better) for under 400k is awfully tempting. Just trying to really work a pros and cons list outside of the obvious
