  1. Quick sidebar related to the “resting down to 175” part… when I take mine off I wrap them in a towel and go straight to the cooler. Does lowering the temp first make that big a difference?

  4. My namesake, my mom’s uncle. The only male of the 8 children of Ukrainian immigrants, he joined the Air Force on his 18th birthday, because his parents wouldn’t let him volunteer earlier. In Sept. 1945 his entire crew was lost when their B-29 crashed into high terrain over central Japan on a mission to resupply newly liberated POWs.
  5. This turned out really well. I turned the trimmings into tallow and squirted some one the butcher paper and before wrapping - hadn’t done that before. I feel like it made a difference; this brisket was really really moist.
  6. Yep. I took it off after 9.5 hours. I had a bbq guru fan for my Kamado grill, so I went to sleep around 1 and temps were at like 135… woke up at 6 and temps were at 175 so I wrapped. At 205 2.5 hours later. Felt perfect though so we will see
  7. Do y’all ever experience a brisket taking way less time than you’d anticipate? Usually I’ve had the opposite, but I put this trimmed 10.5# on at 11 last night, smoking around 250-260 and it’s at 201-202 all over, just not quite probing fully like butter in certain parts of the flat. It seems like it needs to be taken off soon, I’m just really thrown off by how quickly it cooked.
  8. I got about a 12 #er for this weekend, and a 9.5#, both prime, I’m going to freeze and smoke in a few weeks and vacuum seal to take to Pensacola for the family. The totals were around $34 and $28 respectively… the way prices have been lately I felt like I was stealing them.

    I used to work right in that area and went to Cantina Laredo for lunch a few times. I don’t remember it knocking my socks off, but if I lived near it, it’d be good enough to make the rotation. It also helps that I remember their prices being super reasonable.
  13. When I’ve made my weekend Walmart runs I’ve seen the large fans of it so yeah I’d say it’s pretty available if you go at the right time
  14. Put a deposit down on an in transit GMC truck a week and a half ago. Was told delivery would be the 17th, now moved to the 29th so that’s been frustrating. Something I noticed with the spare time I’ve had to wait, though, is that the pricing they gave me is wonky. They took my supplier discount and subtracted that from MSRP for final cost… kinda hard to haggle when they don’t even have any on the lot that I want. But I look online and they’ve got a dealership discount “for everyone”, so their actual listing price starts about $1800 lower than what they gave me the discount on, and is also lower than my price with GM supplier discount. Should I request they put my discount on top of the price they’re marketing online instead of the MSRP? This feels a little dirty to me, like they assumed it wouldn’t do my homework and notice. I’d rather they have just said “we could do the supplier discount but the one we are already advertising is lower anyway”. Fuckin car salesmen. TLDR: Price I was quoted after GM supplier discount added is higher than what they’re advertising online. I’m in the right to bring this up and give ‘em a big WTF, right?
  15. If you want to hear hotel California, just know that they played it first and ton of people were still in drink lines. Regarding Gill, he sang a few of the Glenn Frey songs and honestly I thought his slight country twang made some of them even better. But yeah, enjoy the concert, it was one hell of a show.
  16. I’ve looked at this place before and almost been, looks neat but yeah if it’s mostly patio that’s probably a no go as far as not wanting to show up to dinner soaked through my shirt lol. Bludorn was definitely under consideration, as I’ve been wanting to check it out anyway. How’s parking at Bludorn? Valet? I’m drying out for a while so I’m gonna end up driving and at lest at Hugo’s you can park in the neighborhood around it. Will need to check out this Bar #3 Turning 31, btw, if that helps for suggestions.
  17. I figured this might get more traction in this thread, so here goes: my birthday is in a few weeks and I’ve got a couple friends from New Orleans coming into town for it. They take us to great spots when we visit them so of course I want to return the favor and have a nice birthday meal. I have reservations at Hugo’s since it’s one of my favorites in town, and I figured I could show them Anvil before since it’s so close, but does anyone have any other suggestions that I’m not thinking of? I’m ok with the plan as is but we have kinda settled on several places we like and it might be fun to add something new into the mix.

I am sorry your kid has dietary needs, honestly that’s gotta be stressful, but it was still shocking to see such a large amount when I’m used to seeing none. No need to be an asshole for the rest of the people whose kids can use regular formula and haven’t seen that much in one setting in months.

  22. Vince Gill on take it to the limit was a bit of a religious experience. That was an awesome show, just wish they had saved Hotel Cali for a different spot. Otherwise, damn that was fun.
  23. This is very true. I’ve got a pretty high tolerance for spice, but these aren’t even in the realm of mild.
