    Pizza

    There’s a place called Empire Pizza on westheimer a few blocks west of the beltway that I went to a few times when I used to work over there. It’s probably been a couple years since I’ve been but I remember liking it. They have deep dish as well as a “Sicilian” pie which looks a lot like Detroit style to me.

    That’s fair, it was expensive, and I’m happy to eat crawfish at canyon creek or barking pig or whatever because it’s less expensive, but I’ve found most places cater to the lowest common denominator when it comes to spice. Last time I was at the boot they said yeah just sprinkle some Tony’s or cayenne on it... it’s got to be boiled in to get you what you need. Parking seemed to be fine tonight - we just parked across the street and walked over and it was no biggie.

    Boil house has taken the lead in my book. Still haven’t had T Bones crawfish, but I will say that at boil house, that’s about as close to a home boil as I’ve been able to find.
  4. Only had truth in Brenham once, but that may have been the single best bbq meal I’ve ever eaten.
  5. My game day masterpiece. Leftover brisket I smoked, eggs, tots, cheese, with a kiss of Diablo sauce to turn it up to 11. I don’t think I’ll be able to eat for the rest of the day.
  6. I mean, looking back I’m not sure the acting in the first couple films was any better. Looks like they’re setting up for a pretty bad ass sequel, especially with Johnny Cage being the centerpiece of the next one. Just sit back and enjoy the gratuitous ninja violence The actor that played Lui Kang in the first film is unmatched though.
  7. Haven’t been to a theater in a year, but this was probably the first thing I’ve watched that having the sound bar/surround sound absolutely feel like I was in a theater. Loud as hell and lots of fun.
  8. There should be a pretty sizeable contingent of Cajun fans at the game next fall. My in-laws and all their friends still talk to me about how much they enjoyed playing in the baseball regional in Austin 10 years ago or however long that was. I know lots of folks making that trip... should be a really fun tailgating day.
  9. Got Pfizer #2 yesterday at 4:30. Right at 23 hours or so that headache hit me like a freight train. Feels like I’ve got a really bad hangover.
  10. One of my best friends has a pic sitting on Bernie’s lap when he did the Santa Claus thing. No idea the timeframe but based on my age it has to have been either that year or the year before I’d think. What a wild story that guy is.

    Anyone been to Pinkertons on a Thursday afternoon/evening ? Someone at work planned a get together there at 5. My thought was that since they have the full bar and so $1 beers they might cook more food and not be out of stuff, but I’m starting to rethink that.

    You can’t go wrong with either. It’s been a long time since I’ve had a meal at Pinkertons that wasn’t exemplary, and even then it was good but my expectations had been set very high. I also think Pinkertons gets a little extra love on here because the dude is a huge UT fan.

    Go to Pinkertons if you haven’t been. Truth is great too, but Pinkertons is also a good place to hang out outside, and they have a full bar as well. That’s generally where I’ll take out of town friends if they’re wanting bbq and have caught several away UT games there as well.
  14. This last one was the first I’d cooked fat down (also I’ve seen elsewhere to have point facing the back of grill?) It was by far the moistest brisket I’ve done yet with the other 2-3 all done fat side up. I’d recommend.
  15. Question for y’all: when you do brisket, so you cook fat side up or down? I’ve always done fat side up, but did fat side down on my cook last night and between that difference and a few other things, it was easily the best brisket I’ve made yet. I had to flip it while cutting but the bark still stayed intact pretty well when I flipped it back. I couldn’t tell if there was any difference in the fat being rendered or anything though.

  18. All of the Marie sharps sauces are delicious but they vary in heat. Go for the “Belizean Heat” or the “Beware” with the red label if you want their really hot ones. The white label doesn’t seem to have that much of a kick to it. Probably about the same or slightly more than regular Tabasco. I can’t compare to habanero Tabasco because I don’t use Tabasco because it tastes like shit.
  19. Did your grill come with the wooden shelves or did you add those? I have that same vision Kamado.
