  1. It’s a really neat cookbook. There’s lots of Tex-mex history included as well which I’m into so I enjoy that. I basically followed his enchilada recipe along with the other poster’s steps here (more or less the same) and they turned out great. I imagine it will be a great resource to double check some things that I’ve made several times but have always been missing something, as well as give me some ideas for stuff I haven’t made before. Also lots of recipes from places like ninfa’s, el fenix, etc (old school big time restaurants). I found it lightly used on Amazon for like $10 - well worth the price.

  3. Good post. I’ve never actually had a strictly petite Syrah, but had plenty of blends to where I think that’s something i should try. I’ve had the Meomi and I agree it’s a nice drinkable wine, but I’m not a huge Pinot noir person so whatever... certainly passable if nothing else. I took a lot of my wine taste from my dad who loves Malbecs and zinfandels, but a food Malbec is such easier to find that price IMO. Appreciate all the responses... there’s a lot to be said for nice drinkable wines that aren’t breaking the bank. Thank God y’all aren’t rec’ing Trader Joe’s though

Posted this in the other wine thread, but it’s maybe more appropriate here mostly looking for wine to open when we’ve got some friends over and are wanting to open a few bottles rather than just one real nice one for the wife and me: No shaggy 1%er here, but having grown up with my parents owning a nice restaurant and being wine snobs themselves I definitely know the differences between great/good/shitty wines. There may have been a thread on the other board about this, but does anyone have some recs for nice wines that are somewhat more of a daily drinker/grabbing a few bottles to have folks over and drink with? enjoying more Pinot Grigio or Sauvignon blanc with the warmer weather but this extends to reds as well. I tend towards cabs or zinfandels or really anything on the drier side with reds, and for whites I’m a big fan of Italian Pinot Grigio or sauv blanc. What’re some suggestions in the $15-$20 range that are passable? For my lot I’ll throw in “Odd Lot” blend, about $14 and very nice red, Have seen it a few restaurants around Houston; also had a dashwood Sauvignon Blanc which was really good for the price point for $14 ETA I’m not that much of a snob, just won’t open anything like a Trader Joe’s with friends around.... that’s a full on “gonna get drunk by myself wine” as far as I’m concerned. Definitely open to wines over $20 at the grocery store but I know from growing up around wine that there are still good wines to be had at a nice price.

  7. Alright, I’ve been on a goddamn mission since I saw these posted to make them myself. Bought Robb Walsh’s Tex Mex cookbook to really get the gravy bit down even. I have to say, I just used regular thickly shredded Kroger mexican cheese bc the velveeta wasnt available, but goddamn it turned out great. Used two pans, one with taco meat and one without, and i have to say the one without taco meat was my favorite. Felt there was just too much salt with all the cheese/sauce/meat on the ones covered in ground beef. YMMV though

  9. My visits have ranged from being incredible to pretty good but not the most impressive, although I’ve had way more food experiences. I’ve noticed a couple times I’ve felt the fat on brisket wasn’t rendered enough and was still pretty gelatinous. I definitely feel you on the black pepper though; I love the Meuller style of super heavy black pepper, but maybe that’s just my personal preference talking. Haven’t been to Truth in town but stopped at the one in Brenham coming back from a game last fall and holy shit was it awesome.
  10. My wife is from Lafayette, and I’m almost positive I’ve seen this somewhere in our collection. Agreed with cajun cooking/seasonings; all you really need is the trinity, maybe some garlic, salt, pepper, Tony’s, and maybe a bay leaf. My wife got me a blank cookbook that I’ve used for some family recipes as well as some favorites from the internet. I think the biggest issue is that when I get recipes from the internet is that it can be hard to know if the author is trustworthy or not. When I find a good cooobook I know I can trust pretty much any recipe in there.

After seeing some enchiladas posted recently that made mention of the homesick Texan chile gravy, I started looking into her cookbook as well as the Robb Walsh Tex Mex cookbook and I’m thinking I’ll get both as I don’t really have any Texas centric books. I have the big silver spoon cookbook, but it’s so cumbersome I hardly ever use it; i find I get more use out of smaller, more dialed in cookbooks for specific cuisines. I have an “Essential Greek” cookbook I bought while over there a few years ago that I love - stuff like that. What are some of yalls go-tos?
  12. Anyone got some good recs for me to look into getting a quote for my backyard in Houston? My back yard isn’t very large, but we’re lookin bf to add concrete slab (maybe even tied in to the 8’x8’ slab leading out from back door) and also adding a pergola. I don’t have the eye for this really, or the skill anyway, so I’m gonna hire someone regardless. Would like to spend less than 5k for the whole ordeal but who tf knows ETA 8x11 pergola with like an additional 8 ft wide by 2-3 ft long section of concrete if we can tie it into the existing pad.

  14. Just wanted to throw Phil (and Thad and Danna) some compliments. As first time buyers we probably asked a ton of stupid questions, but he definitely kinda held our hand through the process and made sure we had all the information we needed, and then some. They were awesome protecting our interests against a seller that had some weird shit in the contract and getting us what we asked for pretty much every step of the way. Probably the most important thing to me, anyway, is that we kept waiting for this process to get stressful, and we didn’t have a single day where we were worried about anything. Seriously, if y’all are in Houston call this dude.
  15. I have some friends that were planning to get married in June... rather than reschedule for for football season or spring, they just went ahead and jumped a whole year. Granted it will be Houston in June so it’ll be hot, but thank god the girl is a longhorn and knows not to do that during football season.
  16. Anyone cancelled flights they bought using chase rewards points? Cancelled a Cancun trip first week of June with tickets mostly bought with rewards. They won’t let us call to cancel flights through Chase til 14 days before the trip, but I’m hoping to just get my points/cash refunded. We were flying AA/AeroMexico

  19. Most anything Tyler Childers is great. Also a big fan of All Your’n for a romantic touch. May as well go in the thread for Sturgill etc but this guys got some jams kindof a Hank Williams Jr feel but I’ve been enjoying this dude — probably not what this thread is for after actually reading the OP

  21. Watched “Peanut Butter Falcon” with my wife last night. I’ve got some nostalgia for anything Shia Lebouf does, but this one really rang out to me. My nephew is non-verbal autistic, and my brother doesnt quite know what to do with him. I’m hoping seeing this might encourage my bro with his son. Anyway, still a good flick. Mark Twain-sian
