    You would have hated mine.  Finished the last four of my Christmas tamales today with both American and a shredded mexican blend, Taco Casa hot sauce + a nice drizzle of Del Primo "guacamole flavor" sauce, which is really just a store version of Salsa Dona (and fucking awesome, especially at $1.50 a bottle).  Oh + the end of a bag of Doritos sprinkled over the top and sour cream on the side.  Really just wanted to post about the sauce though- I highly recommend this stuff:

    .Truth told, it's not Louis gumbo, this first time with Instant Pot,  because of the saute heat for the roux, but (1) I can continue tweaking it, and (2) a cold front came in and this gumbo hits the spot.

    you can also just take the inner pot out and put it on the stove.

     

    edit years later: don't do this unless you have the new ones that are specifically made to go on the stove.  with the regular one the stove can warp it and then it doesn't work.

    you can walk around georgetown too.  not that there's a lot to see, but the xmas lights they have are nice.  i do pour into a cup before leaving to walk around montrose with a beer or cocktail in hand, though.
