  2. And Randall "Tex" Cobb went to Abilene Christian. Also, i spend almost $2,000/year commuting to work on the NTTA. Sucks but true.
  3. So glad to be back at work, really need the rest. Lost count, but ended up serving around 150 pounds of brisket, pork, chicken, ribs over the course of the weekend. Sunday morning i woke up realizing i also had to cook 3 bags of crawfish that day. Everything turned out wonderful and everyone was happy. The best news? I did indeed manage to maintain a 4 day drunk and only passed our saturday night.
  4. True story...we put locks on our bathrooms. there is a usaa call center upstairs and they would murder our bathroom.

My parties this weekend are getting out of control. each is over 100 folks. found a really cool place in addison (us foods chef store). good quality stuff and geared for restaurants and caterers. they have bulk peppers, pickles, etc and really good meat at good prices. I now do all my smokes around 300* which cuts time down quite a bit. planning on getting up sat morning around 1 am (and opening my first beer) to get the meat going. that gives me 12-13 hours to finish. I'm doing around around 65-70 pounds raw meat between butts and briskets for each party. a bit more than i usually budget but these are mainly high school boys at these parties so they eat more. probably keep the smoker going till i get back at night and re-loading it for the sunday party. also found out i am doing a crawfish boil for 100 people monday....cant wait to get back to work so i can get some rest.

  8. I did one big cook for our high school's district tournament, probably fed 300 or so people. I did 5 briskets and 6 butts and didnt have much left over. One thing i learned for big groups...CHOP the brisket, all of it. Wow, that made things so much easier. I found a great way to warm the meat up on day 2...i had 15-20 1 gallon ziplocks with leftovers from the previous day. I got my 2 souvides and another guy had 2, we loaded up big ass water pans and the SV had the meat up to temp in an hour-hour and a half. This weekend is going to be tough for me. I am doing 2 graduation parties. My neighbor is nice enough to let me use his trailer pull Shirley smoker so we will get up at midnight and start the cook. One party is 2 on sat and the other is 1:00 on sunday. Party 2 requested a couple racks of baby backs so ill do them on the egg sunday morning. Toughest thing for me will be my ability to keep my drunk steady for 2.5 days.

  10. My kids is in a brutal district. He is ap/pre-ap top to bottom, straight a's, varsity athlete and varsity choir. All of that gets him on the lip of top 10%. He smoked the psat, like 99 percentile. But he isnt top 7% so i assume he is fucked.

  12. My soon to be soph (in High School) dreams of going to UT. However, he is only in the top 12% and is white so i know there is zero chance.

Yes, our football (foster, ray crockett, keeton smiley, etc.)and baseball teams 84-87'ish should have produced at least 1 champ (i guess the 90 baseball team counted). Nied was a childhood buddy of mine, I grew up in duncanville as a kid...we had some badass little league teams. Greg Ostertag was my neighbor growing up.
  15. With: Barry Foster (arkie, steelers). However, i did play "against" him a lot when we went O vs D. He trucked my ass a few times and i still feel the pain. He was as big in high school as he was in the pros. Our team had a handful of future pro's (Duncanville). Against: Joe Bowden (LB, N. Mesquite, played 9 yrs in the pros). I played against a lot of future pro's but that dude was the one i remember most. If we did a baseball one, i would have a page to myself. I played in the hayday of DFW baseball (late 80's, early 90's).

  17. There is a place in Frisco, Kolache Heaven, that has the best kolache's and klobasnek's i have ever had. I just realized there is a new place in Addison just down from my office, Zamykol Kolache's. Tried them today, pretty damn good. That Kolache Factory chain is dogshit.
  18. I go to Spokane often on business and rarely leave the city. Been to CDA a couple times for a day or so. This summer when i go there i am packing the family and dragging them along. Expect to have 4-5 days. Need some recs for things to do/see. More than willing to travel around ID/WA. Thought about a night in the CDA resort, then hitting the road. FTR, have 15 and 13 year old boys who like the outdoors so hope to gear the vacation to maybe fishing/rafting/hiking and sightseeing. Good food and beer for me is mandatory.

  20. it averages 140-150'ish. I test randomly and it can be as high as 200 after a really "bad" meal but morning/fasting is usually 140'ish. And yes, thats why she put me on metformin (which really fucks up my stomach BTW...hate it).
