For those undergrads in the 1990’s who knew of him, Prof. Alan Sager taught some constitutional pre-law-type courses, and he was polarizing to put it mildly; many considered him an flat-out asshole. But his courses worked my ass off, he was generous enough to pay me as a pseudo-TA my last semester, and I credit him for better preparing me for law school. As it relates to Trudy’s, despite his asshole reputation, Sager would hold office hours there, where any students were invited to talk about the coursework and exam prep, and often other trivial matters such as sports and Blazing Saddles (one of his favorite movies), over several margaritas. That’s how I was introduced to Trudy’s, and that’s how I’ll remember it.

  10. Maybe the exception is something like cranberry juice, which my wife and I try to consume on a regular basis. It has a lot of nutritional benefits, and I imagine it's harder to get those and not as pleasant if you try to consume the whole berries. And I'm talking 100% cranberry juice, not the Ocean Spray-type crap with added sugars and fillers.
  11. Same for me. It's become ritual to start my afternoon of gumbo cooking with a spatula in one hand stirring the roux and a beer in the other.
  12. I’ve been meaning to branch out and explore German cooking, but have never gotten around to doing it. That looks damn tasty.
  13. Maiden voyage for gluten-free gumbo. The recipe I used for the roux called for tomato paste right as the roux turns to peanut butter color. It’s weird, and you need to work through the odd consistency before you add the trinity. But it was a hit in my household.

  16. In less playing time Manning seemed to throw a lot more to Wingo. I don’t think there’s a flight risk there.
  17. Going to try a gluten-free roux today because my wife and step-daughter are gluten-sensitive. I’ve read that for gluten-feee roux you don’t want to go past the peanut butter stage because a darker roux will result in a more burnt flavor. Any experience with this or general tips for gluten-free gumbo? I’m also substituting soy sauce with coconut aminos.
