My first gumbo in 2025. The last few times I have used equal parts oil and flour by weight and not volume, I really think I prefer it. This time I used poblano pepper in place of the green bell, not sure I can tell a difference, just not a fan of green bells. Did the shot or two of soy sauce, bo taste damn good. I really like boiled eggs soaking in there during the two hour simmer. Didn’t cook my rice long enough this time, it needed a few more minutes. Still, all was damn good.
That is my exact issue, I’m not a fan of the high proof bourbons. I typically drink bourbon OTR or neat, maybe I need to let it sit for a minute and let some ice melt.
Weller fan as well, need to revisit the 107, wasn’t a huge fan the first time I tried it. Had two bottles and gave one to a buddy who was looking for one. Will probably love it now that I gave one away.
You guys are awesome! Really appreciate the help. Would absolutely travel to wherever is needed. Not sure how to proceed, guessing get the results of the MRI in February and see what that shows. I am assuming the three hour MRI would be half with contrast and half without?
We live in Amarillo and are needing a CT surgeon. Wife has a paracardial cyst that seems to be rearing it’s ugly head. She has had it for years and monitors it annually with an MRI. Seems it’s growing and causing issues, high bp being the biggest concern. She has a 3 hour cardiac MRI scheduled in February, that’s the soonest they could get her in. Doesn’t seem like any one in Amarillo wants to tackle the surgery. Looking for any help with recs, obviously looking like we will need to travel to get this removed. Been told they can drain it but it could just fill back up. Any help or recs?
Cold and windy in Amarillo today. So far we have 9.5 inches according to the weatherman. Great day for a soup or stew. Wife made chicken and dumplings, I’m full as a tic, so damn good!
@Anastasis might holler at Mitch at Krivoman. His stuff is very well thought of on the bow hunting forum I hang out on. He used to be in Georgetown but I think he moved to Round Rock or Cedar Park. He has blinds and feeders as well as protein feeders.

Saw my first MNWD out in the wild, I didn’t buy it, I’ve only had it once and wasn’t all that impressed. They wanted $200, might have been good trade bait. I did buy two bottles of EHT’s Rye offering.
Here is a pic of Chef John’s prime rib method. It works great on normal sized roast, we tried a 12lb one last year and it wasn’t done enough. I’d say anything 10lb and under this method is perfect. This is for boneless, not sure about roast with the bones still intact.
