  1. Wait until you have a final list of attendees before you decide on how much meat and what. I threw some pretty big BBQ parties for 4-5 years in a row that I documented on the old board. You need to account for kids and adults differently and you may want to grill up some hot dogs for kids. I don't think you will need 3 briskets. I used to do 2 briskets, 2 butts, 6 racks of spares, sausage, and 4 chickens + hot dogs for about 150-175 people and we never ran out. Lots of sides (and booze) of course, too. Chafing dishes were a big help. 

    I'm trying to work out logistics for a similar venture that I mentioned in the other thread. I think I have a pretty good plan. 

    Also if you didn't see it in the other thread, Lowes is having a sale until 5/23 on Royal Oak briquettes. $4/bag for a 15.4 lb bag. Try it out before you buy in bulk. Some people had issues with it last year. It seemed to cook pretty well for me.

    Here's a good example of what I'm griping about.

     

    I get HBO but not Cinemax. Note the nearly indistinguishable difference in background color. It's noticeable when both are represented on the same screen, but without any contrast, it's meaningless. Definitely not a logical or defensible design scheme.

    The shades are visually indistinguishable unless you are on a page of your guide that happens to feature both colors. 

    It's probably not ADA compliant, and if it doesn't run afoul of any regulations, then the regulations need to be changed. 

    Thanks but this is wrong. They are exactly the same. I don't see a difference here unless I'm missing it?

    I hate that shit. Everything has some kind of creamy goo sauce in it. The couple times of year I do get TB I usually order it online for pick up at the drive thru so I can pick and choose my ingredients. Much less chance they screw it up. 

  6. So here's something, maybe I missed it but I skipped a bunch of posts because it's golf league night and I'm a little drunk. 

    How the fuck can you tell what channels you are subscribed to and which ones you aren't? There does not seem to be a visual indicator. I hope I'm just missing it, because that would be absurd.

    I had never been there before but some friends from Northville have had birthday parties there the past couple of years for their kids b/c some of the inlaws live in Port Huron. I have to think they underwent some renovations recently because the interior is pretty damn nice...the bars, the bowling alleys, even the gaming areas. I'd venture to say it's nicer than D&B.

  9. The duck saga is gripping. Please keep us posted. I have to imagine Bob is going to cop some sort of a plea deal as long as the judge isn't a quack. 

    We had a stray hen on our street that my wife and some other neighbors were trying to help home. No one knew who owned it, but the old crabby white guy down the street who never talks to anyone was sure it must belong to the new Muslim family. They were apparently going to slaughter it in his mind so they could have halal meat. Shockingly it turned out to belong to the young-ish single hippie chick who moved in 3 houses down from the Muslims.

  10. Teaching is hard as fuck and I wouldn't want to do it and neither would you, despite all of the "free time". It's a thankless job and I consider the byproduct of a teacher's work to be far more important than any project I've ever worked on.

  11. You could also probably slow your temps down a bit and I wouldn't be scared to leave those things on to 210 or higher if you want to eat up time. Pork butts are very forgiving. Almost as forgiving as your mom. 

  12. I think you could cooler wrap tightly in foil and towels and you'll be fine. I would just wrap them right off of the cooker though since they're butts and there's no risk of over cooking. i.e. don't let them rest before wrapping. If they keep cooking a bit so what.

  14. My sister and her boyfriend and my nephews are big pizza lovers. Hell I guess everyone in my family is. They love trying places all over town, and I have pretty much tried all of the places around town. My son's favorite place is a wood fired place about 20 minutes northeast of here, and they all live about 35 minutes west of where we live. But we've been telling them about it and they were determined to try it. 

    It just so happened today I had my son up near there for a cub scout activity (BB gun shooting!) so I floated the idea to my sister and her BF of meeting us there if they weren't doing shit today. It was on. 

    I got their first with my kids and we sat in the corner to the left when you walk in the front door. This place is tiny. The dining room might be 400 sq ft and have 30 seats. The entire building is probably < 1000 sq ft and the parking lot probably has 15 spaces. 

    She texts me that she's five minutes out when we're already sitting there and for some reason I got the inkling to fuck with her considering that they had never been there and were totally unfamiliar with the surroundings. I texted her this:

    So she responds back:

    It was probably below 50 today, and realizing this might throw them off I write back:

    So we can see them walk up from the front windows. They walk in and immediately make a beeline (10 steps) to the back hallway  where the bathrooms are. The look on their faces is of pure confusion. My sister spins around and looks at her bf. He spins around and looks around and sees us. We wave and they are so supremely and utterly confused. They are pointing towards the back like should we be getting up and going towards the covered patio where your seats are. xD

    I am laughing by this point and explain to them that I was fucking with them. Apparently they got into a back and forth in the car because she relayed to him that we were "sitting outside" and he was like "We're sitting outside? That's absurd, it's freezing." and she reassured him "Don't worry, there's a fire pit." xDxD

    Not sure how they didn't figure it out in the parking lot but I got a real kick out of this.

We would go in and sit across from each other and mirror our bets so that we could get as many free drinks as possible.  As I recall, table minimums were $2.  Green killed us occasionally but it was always good for a 4-5 free drink head start on the evening.   One night we were into our deal and the roulette guy figured out pretty easily what we were doing.  He was cool though and just told us to sit next to each other and bet black and red so we didn’t have to keep track of all of the numbers. 

    This is great. I love that you guys came up with some complicated algorithm of who bets which numbers when to "fool" the system when you could have just run the obvious red/black as the dealer suggested from the jump and no one would have cared.

    You can cook hot. Especially once wrapped. I believe Champ cooks pretty consistently at 325. I personally do not believe there is much of a difference in cooking temp based on my experiences. I have turned out some great - any cut, really - at 350+. 

    Tonight's brisket was really good. Crowd agreed it was excellent/drool worthy and will knock the socks off of the picnic crowd. Between 4 adults and my 8 year old we knocked out about 75% of a 12 lber. Making me rethink how many I need to cook.

    That said, I still think the flat dried out too quickly. I wrapped in wax paper and then butcher paper and it helped. But not good enough yet.

  17. Done around 3:45. I pulled it and let it rest until it got down to about 175. I heated a cooler upside down over a vent in my house (yes the heat is still on here, it's 50 and rainy today) and then wrapped the brisket tighter in more butcher paper and then 2 towels that had been in the dryer. I'm going to see how long I can keep it above 140. If this doesn't work I'm going to try fire bricks next. 

    Note - for personal consumption or among friends I normally wouldn't care about keeping it >140 but I'm really paranoid that I'm going to make a 200+ people sick.
