    I think the entire point of texmex is to feel a little shame. Nothing wrong with admitting Lupe makes pretty good food or that a crispy beef taco from TC kind of still hits or that I'll clean up some Rosa's tortilla factory after 11 drinks. I mean, that's what we're fucking here for. This isn't the stick-your-finger-in-your-ass-spit-the-wine-out crowd. 

    as a Texpat i would love a Taco Cabana option 😒

    Texzilla's recipe is way fancier than the one i followed lol

    roux of about a cup each oil/flour, worked it until it was kind of a dark tan (my gumbo would have been closer to chocolate). added about 1/2-1 c each onion, celery, red bell pepper. 2 minutes...added andouille sausage. 2 more minutes...added 4 cloves chopped garlic, two bay leaves and spice mix, which honestly my mate did the whole mise en place so i don't know the exact measurements 😊 but it was the basics: pepper, cayenne, celery seed, garlic powder, thyme, oregano, cajun seasoning, etc...and the one thing i do remember bc i had to double check his work bc it seemed like too much but it was correct - 2 T paprika 😄 (no salt bc broth and cajun seasoning both had plenty).

    let all that cook long enough for garlic to soften, then added about 4 cups greens (just collard and mustard), then broth (chicken) to cover, nestled the smoked turkey wing in there, lowered heat to simmer, and left it alone for a couple hours. 

    it was meant as a side, but it was so good and meaty we're have leftovers tonight over rice with cornbread 😊

  3. so these are called Gumbo Greens. 

    i was skeptical bc both my gumbo and my greens are already perfected, but my mate saw this recipe and really wanted me to give it a shot.

    roux not quite as dark as my gumbo but basic process was the same...roux, trinity, sausage, spices... greens, broth...then a smoked turkey wing. simmered for at least two hours. 

    outstanding! friend who doesn't usually even like greens had seconds.

  4. started at 13 (insane!) sneaking my mom's Tareytons which were just god awful 😝, you'd think that would have deterred me but nah lol. 

    quit in 2009, picked them up again after a couple of years (so stupid 🙄), quit for good 2018. other than a couple years in the 90s when i was cosmopolitan and smoked Virginia Slims and then Capris, was mostly Marlboro Lights then Ultra Lights when those came along. 

    we went camping for the first time in over a decade this year... we were laughing at all the Marlboro Buck$ gear we had in our camping supplies 😄 because smoking and outdoor adventure activities go so well together! 😜

    okay i guess? (i wouldn't know)...but how is that perspective wrong? 🤔

    what Israel has done to Gaza is horrible. it has undoubtedly made Hamas' goals easier. but no country on earth would let 10/7 happen without violent retaliation. we certainly didn't. 

    i don't know what Ben Shapiro or Piers Morgan have said but i don't think it's a talking points conspiracy to state what is a pretty logical human position.
