  2. Preempting the question, the single reason I rec the Ken Onion is the blade guide allows Asian and conventional angles. If you have no Asian angle knives, you can save a few bucks and get the conventional WorkSharp. But even then I'd rec the Ken Onion for future flexibility, and I believe the guide also allows you to do other items like axes or lawnmower blades easier?
  3. Have you tried without the butter? Guga found it actually dilutes the meat flavor, and my limited testing seems to agree. Baste with butter on the sear, but sous vide without added fats.

  7. There are a few other threads on this, but Ken Onion WorkSharp is my rec. Watch some YT and practice on a piece of shit knife a few times first, then nothing is as easy while still not being aggressive on the knife.
  8. Flying during Covid was the most pleasant travel I'll ever have. 20 people on the entire flight most of the time. Tickets were half price or less. And airports had zero lines or waits for check in, customs, immigration. Customs wouldn't search your shit because they didn't want to be near you for any longer than necessary.

  15. The recipe is obviously coming from some credible sources, but I really question cooking white meat turkey to 160. That's dry and overcooked for white meat. Now if that's for full bird, then I agree; dark meat needs 160. If you're doing only a breast, go to 140.

  24. I really don't give a shit about the f8. It's a new production car, they can easily make another anytime they want if someone pays enough. I felt a whole lot worse about the f40s that burned in 2020 and 2021. His squatted truck episodes are always a laugh.
