  7. Decent brisket = $3.50/lb (minimum). Add weight loss from trimming and cooking. Cost per lb now closer to $8/lb Wood = $80-90 per 1/4 cord Spices = pepper is almost $10/lb. And most guys use spices other than salt and pepper Labor = pit guys get $10-12 hour/minimum That doesn’t include any overhead that goes into running the business

  10. You're not wrong. Not at all. But...we put all the accoutrement on the plate so the customer gets to decide what to add/leave off. People get their panties in a bunch when you don't give them all the shit they want.

You, on the other hand, seem not to be able to see the forest for all the fucking trees standing before you. But carry on, since you apparently enjoy standing in line to get house made pickles and some turkey breast. I applaud your blind allegiance and groupthink. So do my customers.
  21. Actually, I do know. Much more than some jackwagon who goes to eat bbq a couple times a month and is part of the mindhive. And you’re welcome to come to my kitchen any day and show me how hard it is to make pickles. I wouldn’t know. I only make 15 or so gallons a week
