  1. I can’t tell if he’s (and others) getting lazy or they are just running out of material because they have to fill so much time with non-sports segments. On the flip side, Sturm has seemed to loosen up a lot. I’ve always liked him because of his sports knowledge, but now with having to do a lot of non-sports talk he seems to be enjoying it.

  3. Braff and HouTex are both right. The Alton Brown method works very well; that said, I prefer the stirring-in-cast iron method. Something about whisking and watching it darken

  5. Agree on a heavy wood board. Have had a large maple board for years -- just clean and oil it periodically. Get one with the grooves on the sides so the juices don't run off. As for knives, I bought a large Shun brisket knife because it matched my set. Works great, but the knives shown above will work great and are at a much better price point.
  6. the beef sausage is fine — good, not great. The jalapeño popper sausage (which you had) is better. The Frito Pie sausage, as I’ve mentioned above, is the winner. Great thing is they make their sausage.
  7. The dry-aging elevates it IMO. I've had dry-aged done through HEB/CM, and it's not as good. I've had a lot of dry-aged beef, and this is really nice. SRF is really good, but I don't think they do dry-aged do they? Pricing is good as well. This was a little over 32 oz for $68.

  14. Which sausage did you get? Next time, be sure to get the smoked scalloped potatoes. Ribs are pretty solid as well.
  15. On Traeger: I have what was called the “Texas Elite,” which is now, I think, the Pro 780. They’ve added to other series since I bought mine, that go up in price and features (Ironwood and Timberline). At the price for the Timberline, I’d buy a Yoder.

  18. Oh you pellet haters. Had a Traeger for years. I’ve replaced the fan once, the firepot once, and upgraded the controller by choice. All inexpensive. Easy to use, easy to clean, and I can go back to sleep. I’ve posted results on this board and the beef ribs board. If you know how to use it (and it doesn’t’ take take long) you can get plenty of smoke and a good ring and bark. I’m not knocking other pits, Or styles, because they are all great if you use them properly.
  19. Sounds awesome. One tip on fireworks at the Mall: daughter lived in DC 3+ years, and watched the fireworks every year. Did it at the Mall one year, and said it was a clusterf***. She said best view/place is to watch from the Marine Corp Memorial in Arlington (which was actually close to where she lived).

  21. Just did a quick check around Austin (Interstellar, Terry Blacks, Stiles,La Barbeque). All have gone up — generally $26-27 per lb
