Alright, made the CFS tonight. Cooked up a bunch of smaller ones to share with neighbors and kids over for trick-or-treating.
Wife and kids got me a side of beef from a local farmer for Father's Day. It's damn near the best beef I've ever had and it was so cheap compared to buying at the store. Highly recommend if you have never done that (or even just a quarter of a cow).
Decided to go with some eye of round and some skirt. Trimmed, tenderized and pounded out thin.
Saved the large pieces of fat to render out the grease to make the gravy.
Setup all ready. Double checking the recipe from the video posted earlier. Used a decent amount more seasoning in the flour mixture than he uses in the video.

Color looks off here but this little bitty one was perfect. This is one of the ones plated up for our friend's kid (8yo and it was plenty for him).
I was looking forward to tossing some leftovers in the airfryer in the morning, crisp up again and serve with eggs.
Sadly there were no leftovers.
I'd give it a 7/10 - better than anything else in Indiana, but I expected more from myself. My neighbors had never had it before and all have midwest tastebuds so they were blown away. Easy crowd to please. Halloween success.
