  4. I should add that I knew I needed help and sought out a therapist. For years, I told doctors I was anxious, nervous, unable to cope and was given low dose Xanex, multiple anti-depressants..none of it worked for me. My blood pressure was not normal and they put me on drugs for that. I sought out a psychiatrist in Dallas hoping that would bring relief. Nope. He just prescribed Buspar and sent me on my way. The therapist I found in Austin offered a free consultation to see if she could be of help. The only words I could come up with to describe what was going on were, "I can't stop beating myself up." I'll never forget it. It was the only thing I could muster, but was the crux of the problem. I didn't want to be there, but knew I needed to be. We talked and she asked me a few things about childhood, but we were able to hone in on some exercises that worked for me. For me, being aware of the mechanics of what was going on and strategies to address these issues were key. It took about 6 sessions before I could look at her and say, "I think I am okay." That was 4 years ago. I still think that I'm okay. I might need her again. That's okay, too.

  6. Look into cognitive behavioral therapy. Writing it down helped as well, I’m sure. Meditation and mentally slowing down my thoughts helps me to not get stuck. It’s not easy, but it is doable and you are okay. Involving a professional was a huge help for me.

  9. Bought a used 1960's Les Paul Tribute honey burst thanks to the advice of this board a few years ago. Solid instrument. $700 used. You might look in that direction. I'm looking for a used Epiphone Riviera in burgundy for my husband. Christmas gift. He doesn't like new instruments, which would normally be a win for me. This is a tough one. I'm trying to keep it under $600. Any help is appreciated.

  19. I didn't give enough context here. I smoked it to those temps, rested it for an hour, then vacuum sealed it and froze it. My plan is to thaw it and bring it back up sous vide in a 165 degree water bath for an hour or so. I think that should kill any Salmonella if it's still present. Also, it is a frozen turkey that was pre-brined and I spatchcocked it. I bought some spring loaded poultry shears that made it so much easier than a knife or kitchen shears. I used a brick of unsalted softened Kerrygold butter and rubbed it under the loosened skin of the breasts and then all over the bird. I also pierced the skin 20-25 times with one of those fondu skewers that is always lurking in the silverware drawer waiting to stab me.   20. If it is a fresh turkey, yes brine it. If it's frozen and "basted" (check the label), then no. The bird can only take so much salt. Rubbing butter and spices won't fuck up the skin, but I would use a toothpick skewer and poke some holes in the fatty areas so that it can render while it cooks. Makes for a much nicer color and texture.
