  1. Early '90s, got paired at Tennison in Dallas with a stand up comic who was in town for a show. After he hit a shot in the creek, he asked if he could use my ball retriever since his was getting regripped.
  2. I've had 2 graduate from UT and 2 from Arky in last 8 yrs. Loved the arkansas experience. Good business school (Sam Walton). Supply chain management is their signature business degree. Greek life was solid for them without the exorbitant costs of UT. Given lower housing and overall cost of living in fayetteville, was less expensive there than UT. Fantastic place to visit as parents. Both graduated on time, and got good jobs back here in Austin. winner, winner

  8. Sometimes it can be pretty thick. Makes for a much more tender bite to have cut it up or removed it. Doesn't render down as well as the fat does
  9. Smoked 3 racks of baby backs last night. Paper towel method for the membrane removal worked great! Thanks for helping me elevate my rib game. Had struggled with trying to cut it off. Was worried that pulling would tear the ribs. 3-2-1 on offset with mesquite. Salt and pepper rub with apple cider vinegar spritz. So good.

  11. Any idea what temp you're cooking at? Thats a pretty fast smoke. I've grown weary of stripping the membrane--I just crosshatch the shit out of it and saves a lot of prep time

  13. I find it interesting that the young man's comment is not really anti-Semetic unless you filter it through a negative stereotype owned by the listener. "I'll pick up these coins because I'm the Jew" Probably not because his family is destitute or cheap. Because his parents have taught him all money has value? I pick up coins,too. Always have. (OK, I'm cheap) Went to Anderson as many years ago. Would have been expelled for the jokes we made back then.
  14. Bump. I've been a 3-2-1 method @250 on an offset smoker. Have always just used salt and pepper w ACV spritz, but am interested in glazes. What kind of wood are you glazers using? Any type wood to avoid?

  18. Point of order. It's the OU game. RRS is acceptable from a journalistic but not a conversational perspective. RRR is just not tolerable. Back on thread, we stomp a mudhole in them after watching a weeks worth of Horns down on film.
  19. Too young for Montana Mining Co, but started with Jim when he was at Balboa Cafe on 6th while I was at UT. Found him wherever he landed after that. He was a good man. Could not have a bad time with Jim around. And he and Linda invented the Mexican martini.
