  3. Cooking on a kamado that I can keep constant for 10-12 hours. That is longer than I've cooked pork butts in the past though and four butts would be tight. I could smoke them 5‐6 hours and then wrap and hold on the oven overnight at 170. They wouldn't get overcooked at 170, would they?
  4. Great to see that Cav still has some power. Not sure if he'll be able to get that next stage win, especially against Jasper, but it's definitely possible.

  7. It is probably not the best event to crash, even though Chazz Reinhold did pretty well crashing funerals in Wedding Crashers. I toyed with making some coleslaw, but my versions are either a mayo/vinegar based jalapeno slaw or chimichurri slaw. If you have a good recipe for slaw to complement pulled pork sandwiches, I'd love to have it.

The pork butts will probably be finished by Saturday afternoon and would probably hold overnight in the Yeti, but I don't want to risk killing all of the old ladies attending my Mom's celebration of life. I still might be convinced otherwise as that would be the easiest. I doubt anyone will care about the pork being pulled early and I really just want to show up with the food ready to serve. I plan to put the pulled pork in a couple crockpots to keep warm and serve.
  9. Smoking four pork butts on Saturday for a lunch event on Sunday. My oven doesn't go low enough to hold them overnight and I'm afraid they won't stay at a high enough temp overnight in a Yeti cooler. My thought was wrap the finished butts whole and refrigerate over night. Put them in the oven at 300 Sunday morning to bring back up to temp. Pull at home, sauce, and then take to location to serve. Any thoughts?
  10. I used to do the Olympic distance every year, but that was several years ago. Only reason I stopped was youth sports consumed my weekends - with tournaments on Memorial Day weekend. It was a relatively large race, but well run. Swim in Town Lake is fine - no currents either way, in the later years there was some hydrilla to swim through, and don't ingest any of the water under the bat shit bridge. Bike is flat, but not straight with several 90 degree corners. Run has a couple of loops along and through the park. Its a relatively large race with a large transition area. Transition used to be first come, first serve, but it might have moved to assigned spots later. I would recommend, although I would probably do a smaller, local sprint tri for my first.
  11. Joking aside, she needs to be looking 30 minutes from doctor's offices. Most of the people that age that I know need to see one of their many doctors every week or two. With bloodwork and other diagnostics, appointments can end up being several in any given month. If I'm 70, I'm not moving any farther from Austin than Bastrop. My in-laws have all of their doctors in Austin - where they lived up and till two years ago. Now they live in Rockport with the same doctors. Their schedule is a shit show, which involves them staying with us or other relatives while in Austin for appointments. Damn, there's that song again.
  12. I've done day trips from Austin to Brownsville and back for barbacoa and Austin to Amarillo and back for barbecue.
  13. Almost anytime I see or hear reference to ZZ Top, my mind starts playing La Grange. Almost like a jukebox grabbing the record, placing it down, and dropping the needle.

  15. Corn dog was really good tasting. Batter was flavorful and the sausage/hot dog was really good. It didn't work great, though. I think that that sausage was a little too greasy to hold the batter well. All in all, it was a good attempt with great taste. Fletcher's has been doing the same thing really well for decades. Fletcher's wins - hands down.
  16. Stiles Switch for lunch to get Fourth of July hot dog fix. House sausage for July is a beef and pork hot dog. Got one of each and their corn dog. Now I need a nap.
