  2. Costco beef ribs are fantastic. Typically $4.99 per pound. Found some in the freezer this weekend when I was digging out a brisket to thaw out. Will do those after the brisket.
  3. An hour commute each way 5 days a week. That comes out to 22 days per year. Not uncommon at all. I’ve been to the office 10 times in the last year though.
  4. Is it possible to kick California out of the US? Stop using kids as pawns. I’m sure the union will hold the state government accountable to keep paying teachers to stay at home. I agree with the person above that said a lot of people have gotten to really enjoy remote work and some workers are just riding the gravy train for as long as possible and don’t want to go back to the office for the 9-5er. Hell, I’m one of them. I’ve found myself to be more productive at home than sitting in traffic for 2 hours a day. I waste 22 days a year of my life sitting in my vehicle to go to an office of 4 people total. My company is downsizing their office space when our lease is up and will be doing a more work from home type arrangement where we’ll go in once a week or so. It’s all about accountability.

Let’s scare the shit out of people by saying it isn’t morally right to take a vaccine to protect yourself and others.
  6. My kid's daycare mandates that all teachers wear them and all kids over 10 wear them (not many, mainly after school care kids that are 10 years old). Literally every instructor/child care lady up there wears it like a chin diaper except the owner. Then one went up there (infant caregiver) on a Friday and ended up testing positive the next Monday. She started feeling ill over the weekend. Whole daycare shut down for 2 weeks. I spoke with the owner of the place when I dropped my kid off the day they started back as she had personally called every parent the Sunday before they were set to open back up and she told me that over half the parents she talked to ended up testing positive and their kids were all positive. No way to tell if parents caught it as a result of the woman who came to work sick and didn't know it. Wife and I got sick. Kid had the sniffles and was lethargic for a day then back to normal. We had 102 fevers and a kid bouncing off the walls for two weeks. It was fun.
  7. Honestly at this point, half the people I see out and about aren't wearing masks. Over half the people at the gym I go to don't wear masks. People are too self absorbed and only care about themselves. Shocking, I know. The mask mandate was just a political play in the first place. Not everyone abides by it. Him opening up 100% and ending the mandate is essentially a pat on the back and gives people the false sense of security that this thing is over. By the end of March, we'll be at 12,000+ new cases per day and in the midst of another crisis in the Med center in Houston. But hey, we beat the thing!

  9. I'm a fan of all the killer hogs seasonings. Just found the Hot rub at Bucee's and put it on a pork tenderloin cook last week. Was absolutely fantastic for pork. For beef (brisket and ribs and steak), I only use kosher salt and coarse black pepper. Kirklands/Costco pepper is very good. Killer hogs makes a brisket rub that I'll put on ribeyes that is 99% salt and coarse pepper.

  11. It was good. Bark was a bit bitter due to over smoking it but I’ll get better. Wife, kid (and dog) loved it.
  12. First cook on my new ugly drum smoker. FIL and I got a 55 gallon drum that was used to import honey with, burned out the liner, built/welded intake valves, exhaust vent, charcoal basket. Took a while to get the intakes right and get it set at 250-275 but I got it figured out now. Painted it with engine enamel spray paint. It’s called an ugly drum for a reason. Threw a pork shoulder on at 10:15 this morning, wrapped at 2:30 and am about to pull it off and let it rest for an hour and a half or so. Like this method a lot as it allows me to smoke at higher temperatures than the traeger I have. Total cost was about $120. Ordered some Weber kettle grill grates, thermometer from Amazon and used a bunch of scrap metal my FIL had lying around.

  15. Starting salaries for CPAs in Texas (major markets, big4 firms) are around $55k (I believe). You'll get up to $70k after 3 years. Move to industry and make $85-90k + bonus.
  16. I rest briskets and really any beef product that I've smoked (ribs, briskets, loins, etc.) in a cooler for at least 60-90 minutes. I leave them wrapped in butcher paper. 11 hour rests are kinda foreign to me but when you're doing 150 of them, it makes sense I guess?

  18. Yes, they’re open in CA. Mainly outside tents (at least at Commerce). Probably one of the biggest action venues in CA. Fuck bicycle casino.
  19. Thinking about making a separate thread unless someone has seen one pertaining to ugly drum smokers. Mine will be finished up tomorrow (painted today) and I'm curious if anybody has used one in the past. I'll post pics when I get it completed tomorrow.
  20. This was my biggest issue. Seems like my thought process was slowed down to the point of a turtle. I had a high fever for 3 days or so (spiked at 102 for 6 hours) but other than that, fatigue, lethargy and brain fog were the worse. Never had a headache. Never had a positive test either. But I did get a positive antibody test.
  21. My mom let us borrow her AWD subaru forrester to drive from Tyler to Houston last week when Tyler through Buffalo had about 2 inches of ice on the roads the whole way. She was about to sell it when shit hit the fan in Texas last week. She used it as a 3rd car and put it up in Colorado at her condo. I didn't lose traction once on the drive. Subaru AWD is a beast of an ice driving car. Roomy too.
  22. Finally lost power at my house in Pearland. We were on the same grid as a wastewater treatment plant about 3 miles away and finally lost it at 8:30 this morning. We've been at my parents' house in Tyler since last week. They've never lost power but the water mains all over town are starting to either freeze or bust, causing water pressure to decrease. It's above freezing at the house and never got too cold for an extended period. Neighbor came over and ran the water multiple times and let it dribble overnight on Monday night I believe and last night. Hope we're good. Probably going to try and make it back tomorrow. Too much ice on 45 and 59. My mom has a subaru she used to use up in Colorado when she had a place up there and we went and got it at the car lot she was trying to sell it at. We're taking that home and leaving my 2WD truck up here and will get it next week. Good luck everyone. Need this power to come back. Too many people are suffering in the cold. Heads should roll.
