  1. I lived at Benchmark Apartments for a couple of years. Great location except for when they tested the sirens early each morning.

  6. RIP, Archie's balls. Vet's assistant said he was being "quite vocal" afterward. Then they gave him some pain meds and all was good. I mean, yeah, I want an aggy vet, but I feel like I'd be a bit vocal too. Maybe assume my boy wants some pain meds for his sack. They sent us home with some free of charge along with some tramadol so he chills the fook out and heals.

    I don't blame people who leave Texas because of its politics. But when someone leaves Texas because of its politics and disparages those of us who stay to fight (and lose because like-minded people left Texas and took their vote with them), that's some weak-ass shit.

  15. Correct. Lawyers make up most of my sample pool for that sweeping generalization. And that's not to say that they may not be good lawyers in other ways. /also, in making that statement, I'm not inviting people to evaluate my posts on Surly for grammar and punctuation. This ain't that.
  16. It is if you can write well. And I, without any doubt, would have my ass handed to me in any sort of math-heavy major. But after years spent in a career where all I do is write and read others' writings, I've come to the conclusion that most people are not above-average writers.
  17. The sous vide is a good way not to warm it up too much, but it's not great for the bark. When I've done this, my method has been: Pull brisket from the cooker, rest it down to 150F. Put it in vacuum seal bag along with some tallow or butter. Seal. Put in refrigerator for several hours. Then, toss it in the freezer Reheat in sous vide. I have a plastic container with a notch in the lid. I just set the sous vide to 145 and let it go for a couple of hours with the brisket in there. Some people say starting off at 185 and lowering to 145 is the way to go. That seems like an extra thing for me to forget to change. So I just set and forget. Remove from bag and place brisket on a sheet pan. Drizzle liquid from the bag all over it. Place in a 250 oven for about 15 minutes. This seems to firm up the bark a bit.
  18. Because nothing should be left unsaid: leave the brisket in the vacuum seal bag when you throw it in the water. Remove from bag once it's warm.
