  1. The only time I use dissected brisket is when I pick up one of those pre-packaged corn beef flats, points, or any combination thereof for some pastrami. And it's not Katz's, but it's a novelty.
  2. I could probably write a post, the length of which would have Lobo shaking his head. But I'll try to keep this short. I was raised in a republican household and always thought I was a republican. I watched Fox News beginning in the late 90s. But I always was pro choice and recall thinking the Clinton impeachment was a stupid waste of time. I voted for Bush in 2000. In about 2003, I was sitting in bed one morning before work, and I was watching Fox News. This is around the time all the information about our "reasons" for invading Iraq were unraveling. And all of a sudden, like a light turned on, I thought, I'm being manipulated. I turned the TV off and never watched that dumb channel again. The self-evaluation that followed was pretty concise. Without going through the laundry list of what I believe, on the social side of things, i.e., pro choice, pro LGBTQ+, pro social programs, etc., I'm liberal. On the economic side, I'm moderate and probably left-leaning. What the hell was I thinking? Anyway, for the last 20 years, I have voted for Democrats in national elections and because of the part of the state in which I live, have voted in republican primaries (because that's where the action is). Anyway, as time went on, particularly starting with the short-lived rise Sarah Palin and the genesis of the Tea Party, I really started to go from I don't identify with the republican party to Something seems really rotten and festering on that side of the aisle. And that feeling has worsened over the years with Trump now leading the charge. It probably always was there. But it has a face and an odor now. On point, I'm enthusiastic about voting for a democrat this cycle because that seems like the only reasonable thing for me to do for the future of our country. That hurts to type. I'd like to see a healthy debate of issues resulting in reasonable, well-thought-out governance. And maybe we can get back to that point. Or maybe the future is just debate within the democratic party between election cycles. But this year, when I voted in the primaries, where ordinarily I would ask for a republican ballot (that's where the action is locally), I just couldn't say it. I didn't want to identify with what that word has become even for the sake of pragmatism. So I pulled a D-ballot. I don't know if I understand this thread. So if I missed the point, please nuke this post, which despite my best intentions, is definitely TLDR. edit to add, I may have violated Rule 3. I'll leave it up just in case. But it's been a journey, which doesn't make sense without considering the other side.
  3. I was just kidding. I had the same thing happen. I've seen it happen on a Big Green Egg too. On the PBC, even if you go slow, if the lid is off those things for longer than a few seconds, that fire gets up, which I later discovered doesn't hurt it so much for grilling burgers if it's the only thing available. Ultimately, I credit it for getting me started in making decent BBQ. I quickly moved to a WSM. I have my first decent offset on order, but I'll always keep the WSM around along with my Kettle. The PBC truly is the master of none, but it might get my brother in law started, and free isn't a bad price for it. I'll be sure to remind him to go slow with the lid.

  8. That extra fat on the point keeps the flat a bit more moist. I'd think separating it hurts you there. But what kills these people is not getting the fires lit and getting the meat on so they have time to get it cooked and rest it. It's TV. So it's mostly fake. But still

To me, the funniest and most relatable part was when the girl who won tried to put pork ribs on the Pit Barrel Cooker (the first time in the entire show I remember seeing anyone use that damned thing), and her ribs fell off the hook and into the fire. We retired ours to the lake years ago, and a few weeks ago, I stupidly hung a couple of baby backs in it, only to have them both drop into the fire. I'm done with it. It's being gifted to my brother in law with a rib caveat.

  17. It doesn't help that none of them go straight to getting the fire going, then rub those briskets quick and get them on the pit. It seemed like it was two hours in before any of them got to that point.

  22. Thanks. I just contacted them and asked to change to an initial boiled linseed oil application. That will be easier for me to maintain over time. Saves me $150 too.
  23. I have a dumb, followup question. I opted for a clear coat over a boiled, linseed oil finish. Do people with smokers with a painted finish do an oil treatment (Pam or otherwise) over the paint? I've seen a video or two where people season the inside and outside of painted smokers, but some BBQ videos don't feature presenters who instill me with confidence as to their decision making. I'm assured this clear coat is expensive stuff, but it's not going to last forever. I can buy a rattle can of engine block clear coat to touch up spots, but would a coat of oil on top of it slow down the frequency of the need to do this kind of maintenance. Or should I change my order to the linseed oil finish and just hit it with oil after each cook?
