Awful Texas foodways
Cold Lone Star beats the shit out of Miller and Bud. It's not pretending to be anything other than a cheap beer, and I'll enjoy it with BBQ anytime. And they have puzzles under the cap that get harder the longer you drink them.

Regional Dishes/Drinks of Texas
There is an Allsup's just outside of Gatesville. We passed it on the way to Kingsland last year. I'd never known of one in Texas that close to a hill or other change in elevation.

Regional Dishes/Drinks of Texas
Oh, for sure. When I first moved to the eastern block, I was like WTF is that. Usually, plenty of Chow-Chow and a samurai sword or five for sale on the same table.

I have one pop up about 1/4-mile from my office every summer.

All Encompassing Whatcha Smoking With
Had the brisket for dinner last night. Held it in the crock pot on warm for around 22 hours. It was delicious.

All Encompassing Whatcha Smoking With
Brisket and cheeks went on at 9:30 this morning. Spares went on at 1. Cheeks went into a crock pot with butter and tallow after about 4 hours. Rolling along

Hey Steel Shank!
On occasion. I've got the pit fired up and am smoking anything that ever has mooed, oinked, or clucked at the moment.

Hey Steel Shank!
Long time listener first time caller 4 reheated, roadside tamales with green sauce, to which I added some bag cheddar and some Buffalo Wild Wings ranch from a leftover takeout container Yes, my wife is out of town, and yes, it was excellent . /No pics, and that's on me

All Encompassing Whatcha Smoking With
Getting a thin, vinegar sauce ready for the rib cook. Just for the wrap and a whisper before it hits the plate.

All Encompassing Whatcha Smoking With
Tomorrow, because why not, I'll be smoking a brisket, a rack of spares, a pair of beef cheeks, some chicken thighs, and some sausage. Tonight, we live life! edit: I like how the smoke stack appears (is) taller than the chimney next door.

You love his boldness, Angie? How do you feel about his italics?- Old Fashioned Hamburger Stands
I wouldn't say I'm a purist. I'm just calling out my favorite burger of all time (Hamburgers by Gourmet, Houston). I usually don't stray too far from the formula though, even though a mushroom burger or something with bleu cheese or an egg is delicious. But particularly if I'm at a place I haven't been, it's a burger, all the way, ketchup, mustard, mayo, shredded cheddar cheese. If they can get that right, I'll be back. For most of my childhood, I was a "hold the pickles" type. Finally it clicked, and I was really happy about being able to simplify my order to "all the way" or "drag it through the garden" if my stewardess or one of my fellow passengers speaks jive. Unpopular opinion. That spicy ketchup is gross.- Old Fashioned Hamburger Stands

I'm a bit evangelistic about this, so forgive me for repeating this. Ideal burger has (on the bottom bun) mayo mixed in with shredded lettuce and shredded cheddar, which not only is a good flavor combo, but is a good barrier between the patty and the bottom bun to keep the bottom bun from getting soggy. Next you have the patty. Pickles on top of that with ketchup to hold them in place. Two slices of tomato over that (seasoned with salt and pepper). Next, you've got chopped onions mixed with a little mustard and a light swipe of mustard on the top bun. Toasted buns enhances this further.- Old Fashioned Hamburger Stands
Agreed. We stopped at the one in Hutto on the way home from Austin once, and while it wasn't earth shattering, it was worth the stop.- The Righteous Gemstones (HBO)
MOAR TEENJUS! I die laughing every time he says it.- Texas BBQ
One summer during college, a friend and I had a job without much supervision. We went to the Men's Club in Houston for lunch. He got an overpriced shrimp cocktail and I got the best damned chicken tenders I've ever had in my life. Not a bad way to spend a four-hour lunch break on a Friday as a 22 year old.- Guitar Players - Who's the best?
Go on, pick it son! Make it count now!- Texas BBQ
Hickory is fine. It burns pretty consistently like oak does. But the flavor is definitely more distinct. I like it, but it's one of those flavors I can pick out really easily compared to other woods. I prefer pecan. It's more subtle (almost sweet). But it burns a little more quickly than hickory or oak. So unless you have a lot of it and can get it at a reasonable price, it's less economical.- Guitar Players - Who's the best?
There is no best. But the fact that Jerry Reed hasn't been mentioned yet when Dave Matthews has been mentioned (even in jest) is a crime. - The Leopards Eating Faces and Unlubed Dildo of Consequences Thread
