  1. Looks good. Just so you know, you don't have to cook them separately when you want to make burnt ends. Cook the full packer and when the flat is done, separate the point from it. If I'm going that route, I will usually trim the fat between the two before smoking so it is easier to handle and come apart when it is hot. Yeah I thought of that as I was cutting up the flat.
  2. Slices were a little dry due to no point. Burnt ends were on point.
  3. Since I am relatively new to the game. At what temperature do I pull the point to slice into burnt ends? How long do they go back in once sliced? They are for dinner tonight so gonna hold in a cooler until closer to dinner time. At 187 now after 5.5 hours.

  11. Went to Zinc last year. Pretty damn good and bad ass patio. Table side guac is legit. Chris Madrid's was on point when I went there last summer. Mi tierra is a place you go for the experience. They have some good options on the menu but most of it is pretty bland. Yes Mi tierra, La Margaret, and Pico de gallo's is all owned by the same family. The last really good Italian joint in San Antonio closed about 15 years ago. Fratellie's. Rosario's is pretty damn decent. Enchiladas suizas are bad ass. Also, can't go wrong with a lunch at Schilo's.

  14. Yes it is. I have eaten at the 1604 location and it is not worth it. The Helotes location to a huge dip in quality about 2 years ago. It has come back up and been really good the last few times I have gone. Definitely crowed and slow. If you are not in a hurry and want a great patio to chill out with a few drinks and good food Helotes is the spot. There are some things they don't do well but the Valerie's has always been solid.
  15. PSA. If you are in San Antonio and want some badass Mexican food, make the short drive to El Chaparral in Helotes. Order the Valerie's special beef and thank me later.

  20. Knife sharpener. Can you sharpen a serrated or scalloped knife with a regular sharpener?
