I was fortunate to return to DFW at the ascendancy of Texas/Southwest cuisine in 86. It was a special time as it transformed fine dining which at that time was focused on the French Room, Saint-Emelion, and whatever was spinning around the Reunion ball. You youngsters don’t realize what eating out was really like until the 80’s.
The takes were so different with Dean Fearing at the Mansion (that fucking lobster taco), Stephan Pyles at Routh Street and Baby Routh, the Rathbun places, Michaels in Ft Worth. When Grady Spears opened Reata on top of that bank it was so good. Those tenderloin tamales, his chile relleno, and CFS was all so good. As he left and went down his path of insanity Reata at Sundance Square had ups and downs. Gotta give it a shot.
