  3. Actually Thanksgiving was the 28th. They had a LULAC dinner in Houston and flew to Ft Worth and stayed in the Hotel Texas (now the Hilton). Had a chamber of commerce breakfast event and then they flew to love field. In San Antonio day before Kennedy and Johnson had a loud argument in the pres suite because LBJ had not settled the split between Connolly and Ralph Yarborough. That rift was never really mended and that was the early catalyst of the state moving to the GOP a decade later.

  5. I didn’t see a thread on this. 60 years ago today, I was almost 5. Mom was ironing clothes for us to drive from Ft Smith to Thanksgiving with family in Ft Worth and Oak Cliff. She was watching As the World Turns. This bulletin popped up and then Walter Cronkite came on with the news. A couple days later my cousins and I are watching am cartoons. Program interrupts and it’s Oswald is getting transferred. I watched him get killed on TV eating my Rice Krispies wearing my pajamas. Some conspiracy talk was immediate. He’s alive on a machine in the Parkland basement. but the narrative of a communist nutjob seemed plausible to my parents. My dad was federal leo, a postal inspector. he was a great detective and punched holes in the conspiracies as the years passed.

  14. They love those incentive contracts and I do too, but they don’t work the way these fools think they do. The point of them is to avoid the stupidity of expensive extensions for a single good season. So unless you’re hiring an ingrate, the contract is going to be at minimum competitive to the market. If the median for the top schoools is $8m (just numbers for talking) that’s the starting point, so maybe you’re in at 4 or 5 years at $8.5. The incentives sometimes are stupid. $100k for a bowl appearance. Huh. Win 6 games to go to a minor bowl that is a money loser? Nope. If expectations are what this yo-yo says then it’s $500k for an SEC Championship and a mill for an NC. Done. And no autoextension for 10 years at $12mil with a 10% escalator each year.
  15. This. Having spent too much of my life as a TexPat the search for TexMex is a futile effort in disappointment. When we lived in SanFran an On the Border opened in the far South Bay. We drove two hours to get Califoricated slop. Worse was our 3 years in Portland. No Mexican food at all back then worth a shit. It was like the PNW was where Mexicans that couldn’t cook worth a shit were all sent there. Whenever we came back we left DFW and went to el Fenix or el Chico or Taco Cabana or Abuelos or whatever we first came to.

  20. I likes your recipe better than Leah chase’s. I’d had gumbo z’herbes uears back at some home in the wall and it popped up. I also didn’t put romaine lettuce or spinach in there. Actually the only real difference when I made it vs making a pot of greens really was the roux.
  21. This was standard table set up at lots of places, but as noted above it was what you got at El Fenix, El Chico (our usual when the Cuellars owned it), and most mom and pops. Back then the TexMex joints in Arkansas also offered all this, and when I lived in Memphis you got complementary queso (cheese dip back then) too. I forgot but many would put a basket of saltines out there too. Back then your platter was put under the salamander to melt the cheese sprinkled on top of your enchiladas and tamales, and to put a nice top crust on the refried beans which were 40% bacony lard. When they said “your platter is hot!” it was at least 700 degrees.

As a kid, most TexMex joints would load the table with chips, “hot sauce” in a pitcher, ice water, then bring a bowl of jalapeños, onions, and carrots en escabeche, butter pats, and hot corn tortillas. Most had a killer punch that I later learned was basically sweet tea, pineapple juice, and red food color. With the big dinners you’d get pineapple sherbet or peppermint ice cream, and often a bigass praline. I know of no joint still doing a huge setup like that anymore. But the flavor profile back then of these places I am still in search of. It’s probably a combination of lard, masa, and the chile powder available then, and the soul of the abuelita in back running the kitchen.
  24. Maybe that can serve as a good warning about eating lots of sugar and HFCS laden Route 44 drinks.
