I thought the food better at the original on Race St but she’s added a more TexMex y options with an ancho chile sauce that isn’t quite gravy, and she added cheese enchiladas. It’s been awhile since I ate there.
  2. Oyster dressing is an old dish that for most folks was made with canned oysters. It’s how my grandmother made it for a couple of uncles, fresh oysters being a rare thing in 1915 Groesbeck when she learned to make it. It was putrid. Like baked cat food.

  7. I would enjoy an old timey sit down Pizza Hut. I grew up with them back when they only had thin crust pizza, there was no delivery, and takeout wasn’t in a box but in a pyramid shaped paper bag. It was great.

  12. My feelings would be much different if Jerry hadn’t kicked me in the nuts with that Dak contract. I think it kicked the rest of the team in the nuts too, seeing all their money or jobs going to a loser. if he season was going exactly like this, but Dak was playing out his final year, McCarthy and staff leaving, and high draft picks, new QB, and a new coach coming I’d feel way better. Instead this team is fucked for years. Dak won’t be curable until after 2026 and doing a Russell Wilson cut and eating $62 mil in dead cap (in the unlikely event his contract isn’t restructured with a shit ton of void years. ). Dak will murder this team until 2030.

  14. I started doing this years ago when we lived in California. Was asked to make “real Texas Chili” by the host who was Canadian for a Super Bowl party. Asked to define it, he said “ you know, chili, beans, sorta spicy…the real thing!” i told him I’d need some room. Anyway I didn’t compromise the real lines. I was the only Texan, the rest were Bay Area locals, New Yorkers, midwesterners. Having eaten out with them often they had zero clue and little heat tolerance. Made a simple pot of ground beef chili with gebhardts and crushed tomatoes. A pot of beans. And lots of add ins. It’s evolved and expanded. I have a DiL from west Oklahoma so it’s bean tolerant. my last big one: big pot of Red (ground 80/20, tomatoes, chili powder, cumin, onions, garlic; they love it and I figured out doing a chile paste and chuck roast is lost and waste of time and money) pot of green chili (ground pork, pork shoulder, onions, jalapeños, poblanos, anaheims, tomatillos) pot of pinto beans made with bacon grease, bacon, ham hock, chile, beer) Mexican rice, Fritos, tortilla chips, saltines, chopped fresh jalapeños, chopped onions, biscuits or flour tortillas (great with the green), sour cream, shredded cheese. A bunch of other shit. if you’re have the notion ill grill up hot dogs or links. I like wrapping one up with chili cheese and onions in a flour tortilla. Always a hit and something few have had. My dad made them when I was a kid.

  21. My son made this today. It’s “over the top smoker chili”. I put it here as he’s in Oklahoma, married to an Oklahoman from the panhandle, who has a midwestern palate and insists on beans in chili. So I expect it has beans in this. the meat is venison, ground 80/20 beef, and chorizo. This was a test pot as he’s planning on making tweaks to this for Thanksgiving weekend. he didn’t send a pic of the finished product
  22. Is that a steak for just you or for a family? We got invited over to a colleague’s home some years ago. My wife called his wife to see if there was anything we could bring. “ No, Jim’s cooking steak!” We got there and it was four adults and two teenage boys. his wife told him it was time to put the steak on. He came out to the patio with a single strip about that size. When she said steak she meant one fucking steak. This dude made probably $250k in the early 00’s. We got like three slices each. A plain salad and some instant mashed taters. we had to stop and pick up burgers on the way home. B
  23. Not a criticism of Godfather II but a what if. I’ve read that The original script had no Frank pantangeli but it was Clemenza originally in that slot. Richard Castellano made some demands that were rejected and refused, and died offscreen. I think The pivot to Pantangeli was masterfully written and was perfectly acted. The scene between him and Tom at the prison was powerful stuff. But what if it had been Clemenza in those scenes? Different but I’m doubtful they’re better.
  24. A reference for size: a regular McDonald’s burger is 1.6 oz per patty. We’d make them for ourselves like a smash burger and cook them to where the meat was cooking thru and then flip for just a few seconds, season heavy with salt and pepper, throw some grilled quarter pounder onions on, cheese it, put like four on the bun. it’s basically crunchy meat and melty America. also if you have the tool, grind up a chuck roast and use that. It makes a hell of a difference. a griddle is best. If no blackstone use a gas grill with a cast iron griddle and crank it hot.
  25. Well your OG joints would sell for at for $12 a lb as it would be whatever they caught in their traps. Panther City is likely using a craft raised product fed only organic shit, the wagyu of rats. So $35 a skewer sounds right.
