  16. My failsafe method that everybody loves is to throw a stuffed 12 pound turkey on my Weber kettle grill. I make a big ass mound of briquettes and once it’s going I create a round circle of briquettes and stick the bird in a pan on top of the grill and close the lid. The temperature is so hot that the skin of the bird turns extremely dark brown, almost almost black, and all the moisture stays in the bird. The breast meat never gets that very white color it does in birds that are dryer, but instead stays extremely moist and slightly pink (even though the temperature is absolutely high enough to eliminate any problems). The bird comes out with a slight hint of barbecue smoky flavor - but not a smoked turkey taste. A 12 pound stuffed bird is done about in about 2 1/2 hours. At about an hour and a half I will add more coals. You need to make sure the air vents remain open, and I always stick something like a nail under the lid to allow a little more air than the vents will provide to make sure the coal heat remains constant. The nice side benefit is that it frees up your oven for whatever the hell else you’re doing on side dishes. I have never had a complaint and it is almost stupid proof. If you screw up in the coals (or you buy cheap coals that burn too quickly and don’t last) you just throw it in the oven at 400 for another 30-45 minutes and it doesn’t seem to change the taste or meat moisture at all. It’s just one more of a bunch of ways to cook a great bird.
  17. Well, you did have a good sense to join the SEC when you guys were on the rise. It would not have been so much fun under different coaches when you were losing to Kansas. it would be like Florida joining the SEC from a different conference under Spurrier in the mid 90s versus Florida joining the SEC under Billy Napier last year. Your SEC first year is like Paul Simon’s lyric, “the whole world whispers, born at the right time.” But none of that means shit. You joined when you joined and are kicking ass - which is really the only stat that matters. The fact that next Saturday is a game between Texas and Aggy that decides who goes to the SEC championship game could not have been drawn up any better from old rivalry standpoint. You had better humiliate their ass and then beat Georgia. This gator is all in on that.

  19. there are a lot of reasons to dump on Billy, God knows, but the timeout was not one of them. People are essentially saying that he should’ve known through some mind reading predict the future skill that the snap would be screwed up. We had just given up about a 20 yard vertical pass, and we seem to be a bit unsure what we were doing. I did not want to see a repeat of that pass completion, and a time out at that point was not egregious to me to make sure the defense was in sync When he called the TO nobody could’ve known the snap was going to be fucked up. If the rumors out of Gainesville are true that he keeps his job as long as he gets an OC next year, I’m OK with his being demoted to overall CEO who gets his hands off the fucking offense. The players love him, and it is honestly amazing to me that the players stayed all in despite a really shitty season with losses caused by shitty play-calling.
