  3. https://www.seriouseats.com/chicken-enchilada-soup-recipe I made this to eat for lunch this week. I didn’t add the cheese to the soup, will add to each serving instead. It’s tasty but not spicy at all. Needs chopped jalapeño mixed in to the cheese and cilantro when served.

  5. I brush each side of the tortillas with oil, wrap in paper towels, and microwave for 30 seconds. Makes them pliable and easy to roll. I notice no difference in quality since switching to this method from briefly pan frying.

  10. Ours was put in by the previous homeowner. Only drawback is that it can get really slippery when wet.
  11. We booked in January 2021 for a trip in May of 2021 and ended up staying in Wawona. It was about 45 minutes to the valley floor and it was certainly not a fancy lodge. We stayed in a small, 60s era cabin that was very clean but far from posh. The best possible version of a Yosemite trip needs to be planned at least 18 months out. Having said that, our trip was absolutely incredible. We went the week before Memorial day and never had trouble parking in the valley or super congested hikes. The weather was also perfect. One thing that the kids (7 and 10) loved was renting bikes and seeing the valley that way. The food inside the gates was generally not very good as is common in national parks, but there was a decent pizza place/bar in Curry village that hit the spot. Our big hike was taking the mist trail all the way to Nevada falls. It ended up being 10 miles 2500 feet in elevation gain, which was about the max we could expect the kids to handle. We will be going back as we did not hit Toulumne due to staying so far south. Getting a half dome permit hiking Cloud's rest will also be on the agenda. We flew in and out of Fresno and paired Yosemite with 2 days in Sequoia/King's canyon. It was lots of driving but that always comes with NP trips. Everyone should go to Yosemite at least once in their life.

  13. I was there about a year ago and there was nothing different from my pre-covid experiences. Well--they didn't have the 24oz Dale's Pale Ale anymore. That stung.

  15. Do sequoia/king’s canyon instead. The drive from the south entrance through the garden of the giants is beyond description.

SG is short for Sand Gap and HC is for Hurricane Creek. Those were the two places we stayed. All of these trails were incredible and off the beaten path. We saw maybe 10 other people maximum at each location. There is a ton of bang for your buck on Upper Falling Water road that runs along Falling water creek. It will be labeled at County Road 1205 in Witt County. If the creeks and rivers are running there are 5-6 cool hikes you can hit in one day there.
  18. There are several rentals around the Ponca area. Tough to beat the Buffalo National River. Tons of hike there. Make sure to hit Whitacre Point and see the elk in Boxley. We have rented this spot: https://abnb.me/SwrPFKn8nnb . It’s in a great location to access the Ozark National Forest. This is a very underrated area of the state. No matter where you stay make sure to buy this book and bring it with: Arkansas waterfalls guidebook https://www.amazon.com/dp/1882906489/ref=cm_sw_r_cp_api_glt_i_MG7WBYX3X17R184Q40NT . Best time to go is spring. Hiking and floating to be had everywhere. make sure to stock up on groceries and booze because all of the places worth staying or going are remote as hell and won’t have much by way of commerce. Hope this helps. We try to go at least once a year. ETA-these are North central AR recs.

  22. I was there 12/26 and everything was excellent. Its always funny to leave there with and then drive past Pecan Lodge with a line wrapped around the building. Folks don't realize better food with no line is 1/2 mile down the street.
