  4. Nope. They are quite different. As said, gumbo is a stew, and it might be eaten alone, or with white rice, or French fries, or with potato salad. Jambalaya is very similar to an arroz con pollo. The rice is cooked in a seasoned broth with added proteins and vegetables. The rice absorbs all the flavor of the ingredients. Would you confuse Chinese fried rice with kung pao chicken that is served on rice?

Tiffany is rock solid. Love her cooking. If you haven’t tried her food at Roots I suggest you try it out. It’s the best fried chicken I’ve ever eaten, which it should be at $56 a bird. It’s a great menu reflecting her southerners and world travel. The judging isn’t blind. They know who the chefs are. So it’s cheesy in that regard.
  14. My career mentor grew up in New Orleans in a blue collar section just outside the quarter and lived and loved everything about the city and Louisiana. Irish-Cajun and he said the old definitions really hadnt held in years; that family foodways and where you grew up had more to do with it now. His mother put tomatoes in gumbo but not okra; they were sporting family so ut depended on what his dad hunted and fished or what was cheap on the docks. He used the old joke to define it, like what’s the difference in pasta and macaroni? About eight bucks. And it applies to Cajun and Creole, rustic vs higher end, yada yada. He made killer etouffee, gumbo, red beans, etc. at Thanksgiving he’d fry turkeys and you’d get your appointment. He’d give you a great fried turkey, crawfish dressing, shrimp remoulade, and a bourbon bread pudding with “vanilla gravy”. Good times.
  15. In the strange early days of FN, he had a show called Grillin and Chillin. Him as the urban propane guy, partnered with Jack McDavid as the “hick from Virginia” (he had worked at Le Bec Fin!) cooking on charcoal. They were usually in a pasture.

  17. I hate this for Mowins because she’s a really good broadcaster, does solid play by play, and knows the game and the league. She is 10x better than RG3 on anything TV sportswise. But that voice …is an adenoidal chainsaw. You’d think there would be some kind of surgery to fix her sinuses or something. If she had any writing ability she’d be great as a lady beat writer, like a Charean Williams or Mary Kay Cabot, both of whom I think are best of best at it.

  19. My wife will watch nothing with a dog in it if she believes it’s gotta dog gonna die. I can’t even say the words Ol’ Yeller. The mind show isn’t listed in DDD yet. So does a dog die in it? She believes it might have dogs suffering in a research lab. On the other hand she could watch a movie with a human being tortured and fed into a meat grinder without an issue.
  20. Fish knife vs butter knife girl battle! What a cunt. Back when I had folks working for me I’d take them to lunch or dinner, partly to see how they treated waitstaff or service folks. If they exhibited any assholery towards service providers I’d shut down the process. We’re retailers so I expect my staffers to treat folks right. Put on airs, well go fuck yourself.

  22. I’ve eaten about half of these. Jakes, Kincaids, M&O, Griffs and many others aren’t playing. I’d go with Fred’s, el Primo, Fuego as the top three of my places I’ve eaten at in this group.
  23. So I’ve never tried the oven roux because when I watched Alton brown it looked like it just took forever. It looked like one of his science guy projects. If’n you say it makes a big difference in flavor I’ll have to try it. Have you posted your stock receipt? Is it a seafood or bird focused stock or whatever you got? Have you tried the oven roux in other dishes like an etoufee? Generally when I get the hankering for Louisiana food I’m making a shrimp etoufee rather than gumbo.
  24. We loved Colorado. Lived in Broomfield so halfway between downtown and Boulder. I’m sure it’s way different now; we rturned to DFW in 05. If we were to return we’d probably look for a place on the 287 corridor from Longmont to Ft Collins. Close to the front range. Or we’d head west to the Grand Junction - Ouray - Durango corridor
