  1. Depends on what time he wants to eat. Terry Black's and Stiles Switch have dining rooms with full service hours, those are your best bet for evening meals. I'd do L&L for lunch. Keep in mind they only do brisket on weekends but their other meats that are available every day, are all pretty great. The beef cheek is fantastic.
  2. Yes, of course. Originally the chopped beef was just the trimmings mixed with sauce, and cooked down. That's why it's so greasy, it's mostly fat.
  3. Completely agree, this is the ratio I use as well. Agree. I always taste at least a little bit of grittiness, in any recipe that uses powders. That never happens with rehydrated peppers run through the Vitamix for a couple of minutes. So smooth.
  4. Properly cooked brisket flat should be moist and tender and should not need sauce any more than the point does. And a little sauce on a foldover sandwich made from flat or point, is quite tasty.

  18. Don't look now, but Lake Travis is up 1/4 foot since noon today!
  19. Everybody needs the rain. Once the ground is completely saturated, then ideally it would fall into the Lake Travis and Lake Buchanan catchment zones. But we don't get to choose so at the very least, this week, we can celebrate an important victory over the Austin FF.
  20. Not really, the Ped/LT basin out toward FBurg only got like 1-3" scattered around and the streamflows show that it's mostly just soaking in. Max flo is 1,564 way out west, and a bunch of zeroes closer in. I know, DebbieDowner.gif
