Favorite Hot Sauce

too late for now - mikey v's is from georgetown and has a retail shop on the south side of the courthouse square.

Herdez makes what they call a street sauce in a few flavors. I have the Roja and avocado cilantro. Going to get the rest. They slam. Not really hot sauce per se but also not salsa. Reminds me of the thin sauces you get at a taco truck. Great on eggs, tacos, your mom.... whatever.

A few years back I got tired of the pepper flakes that I used on my pizza having no heat. I was blindly grabbing pepper flakes and later realized that the red pepper flakes from the spice rack are not the same as chili flakes. While going down the rabbit hole, I discovered this company and ordered a few containers. If you like the heat and flavor of Habanero, I recommend it. The Serrano is really good too, but not near as hot. They have dozens of products that you guys might be interested in if you like to spice things up. Lately I've been baking tilapia with a little olive oil, apple smoked sea salt, garlic powder, and the habanero flakes. Me thinks it's pretty tasty.

According to what I read, crushed red pepper flakes tend to be a mixture of different peppers. This includes peppers with no heat used as a filler, like bell peppers. Chile flakes are just that, chili pepper flakes. It's like everything else, it's gotten to where you can't trust the labels.

"Red pepper flakes are made from a mix of peppers from the capsicum annum family. Don’t get confused by the latin. You know these guys. We’re talking peppers like jalapeño, bell, Fresno, and Anaheim peppers. But the most commonly used pepper for crushed red pepper flakes is the cayenne pepper. Thanks for posting that.  I bought some of their Trinidad moruga scorpion flakes.  It's legitimately very hot, which is what I was looking for.

My teenage son goes through hot sauces, mostly Mexican styles like the hottest Valentina’s, as if they are going out of style. So we got him some hotter sauces for Christmas and we’ve been using them. Some were so absurdly hot that we just threw them away after trying them because they were ridiculous. 

The big winner, which I am sure is mentioned somewhere here, has been the Yellowbird ghost pepper sauce. It’s outstanding and we use it both on its own and blending it in with other stuff. Add a squeeze to Whataburger spicy ketchup and it changes the experience, for instance. Lazy and easy and delicious with fries or their hash browns.

We got 3 of the Yellowbird sauces for our younger daughter for Christmas, as she asked for hot sauce.  I was sure she'd be surprised and unaware.  "Oh, Yellowbird, I love this stuff.  We serve it at Kerbey Lane Cafe."

This flatiron stuff is awesome. It goes great on stuff that isn’t great for wet heat sources.

I never noticed that Dark & Smoky BBQ Rub before. Just ordered it. It looks like it could be the perfect rub for fajitas.

In news that is relevant to no one but me, I can say that after samplaing all of the Valentina's brands, Cholula, and Tapatio that by far I think Tapatio is the best. I think all I have left to try is El Yucateco. Tapatio was far and away the winner through.

Certain El Yucateco sauces will light your asshole on fire. Great on bacon egg cheese sandwiches. 
 

Melinda’s garlic habanero has recently entered my rotation and I love it. Reminds me of torchys diablo.

While not as hot as some of the hottest, I just really like the flavor of the yellow scotch bonnet hot sauces.

The little bottle is one of several I re-ordered from some small vendor on Pike Street market in Seattle.   I go through them like crazy, but for some reason, they don’t have a larger bottle, so I buy several of the small ones at a time.

I splash them on all burgers and chicken sandwiches - and on most egg dishes I have for breakfast.

Big fan also, this one is my favorite that I have found.  This one is a bit spicer than most scotch bonnet sauces but I love the flavor.  Also it’s bigger bottles mostly.

This stuff is great but you need a surgeon’s hands when the bottle is half full. It’s thick so you start with some momentum and have to dial it back pretty quick.  Or else you end up with a big blob right in the middle of your plate.

Always have a bottle of scotch bonnet hot sauce in the fridge. Goes great on scrambled eggs.

I need these two to come in bigger bottles. No luck finding them anywhere besides Fiesta.

I made a version of that Marie Sharp last week.

I smoked 20 habaneros for an hour. Blended them with vinegar, salt, and boiled carrot, onion, and garlic. I was aiming for Smokin’ Marie but it turned out closer to the OG habanero sauce.

I've had yellow bird recommended twice this week before your post.  Guess it's time to take the plunge and get a bottle. Had close to 40 different sauces in my collection a couple years ago.  Trying to bleed out the ones I don't love or minimize sauces with the same flavor profile.  I'd like to end up at 10-12 that are just my favorite go-to sauces with a wide variety of heat and uses.
