Need to cook breakfast for 60 on a campout

I think I'll have a large free standing camp stove and griddle, and that's about it. Need to cook breakfast for ~60 people (adults and kids) including a few vegetarians (no eggs either).  This is for a cub scout camping trip.

Any suggestions? I'm thinking maybe breakfast tacos with pre-cooked sausage, eggs, maybe hashbrowns.  I thought about bacon and eggs and pancakes but I'd likely need to do the bacon ahead of time.

Made to order omelettes and a bloody mary bar.

Or.....  Putting out a few pounds of fruit is easy to do (strawberries, grapes, bananas, mandarins).  Wash it the day before before and put it in ziploc until you serve it.  Also, Jimmy Dean makes some pretty solid pre-cooked sausage patties (Sam's).  Let them thaw overnight and then put those in a chafing dish, with hash browns in another and then cook a few dozen eggs?

I would be pushing a lot of water on them when they wake up (which they should be doing anyway) so their hunger is minimal. Then I'd make a double batch of porridge or oatmeal, and maybe pull out the family size pop tart box if they finish that off. This puts the anus on the schmuck in charge of feeding 60 people lunch.

This is a good idea.  Just package the fruit separately until the morning of.

Yep, shouldn't take more than 30 minutes to feed everyone. 10 - 15 minutes for the bacon & sausage, and not long for the eggs. Buy some of those disposable baking pans for the eggs.

Good God, haven't any of you ever tailgated before?  What is this pre cook the eggs shit. Have you ever cooked eggs? Fucking idiocy.

This is not that hard. Use that griddle and fry up the bacon and sausage. Get a helper / sous chef to crumble the sausage up and to beat the eggs. Start the eggs on the griddle in batches. As the eggs finish, mix in the crumbled sausage in half the egg mixture. Serve the sausage and egg onto tortillas and top with shredded cheese. For the plain egg shovel onto a tortilla and lay a strip of bacon across the top and top with shredded cheese. You now have sausage egg and cheese tacos, and bacon egg and cheese tacos.

Fuck the vegetarians. Buy some Natures Valley bars for them.

You'll need 6 dutch ovens and a giant bag of charcoal.....  about 30 minutes in, you should have a hoard crowding around begging to know what's in the irons and when will it be ready...

cooking the way we did in boyscouts 40 years ago will create memories for the kids....  home depot sells your basic dutch oven for $22.  if you have the money, this slays any griddle/grill/tailgaiting setup.  the ingredients will also run you $150 for 60 people.... but the below recipe is almost foolproof.  you will be the hero of the weekend.  also go to sam's and buy 15 2-packs of Simply Orange.  Do it right.

THREE FIRES MAPLE CREAM CHEESE FRENCH TOAST
Servings: 10–12 (so obviously mutiply all ingredients by 6)
Preparation Time: 1 hour
Challenge Level: Easy

What You’ll Need:

  • 1 dozen eggs
  • 1 1/2 cups milk
  • 1 cup maple syrup plus extra for topping
  • 1 loaf French bread, coarsely cubed
  • 2 (8-ounce) packages cream cheese, cubed
  • 14-inch camp Dutch oven
  • Large mixing bowl

What You’ll Do:
In a large mixing bowl, blend together the eggs, milk and 1 cup maple syrup.
Arrange half of the bread cubes on the bottom of Dutch oven.
Evenly pour about one-third of the egg mixture over the bread cubes.
Layer the cubes of cream cheese over the bread.
Place the remaining half of the bread cubes over the cheese.
Pour the remaining egg mixture over the bread.
Using 21 coals on the lid and 11 briquettes under the oven, bake for 45 minutes, refreshing coals as required.
Serve with maple syrup to taste.

BUZZROCK is standing at the camp kitchen, steam is emanating from the large dutch oven. A group of boy scouts sit around the campsite, sleepy-eyed but looking bored and restless.

BUZZROCK:
"Ok kids, come and get your beans!"

BOY SCOUTS slump their shoulders and lean back in exasperation

ONE BOY SCOUT, TO ANOTHER
"This campout sucks. This is the third meal in a row we've just had a bowl of frickin' beans."

1.  Secure Webelos 2's (AOL's) & have them cut up various ingredients or sort them into bowls (cheese, crack eggs into larger bowl that can be ladled or large spooned out of).

1a.  Ingredients:  Onions, [green and / or red and / or yellow / and or orange] bell pepper, "Mexican" 3 variety cheese package, diced ham, maybe even small bits of potato.
2.  Have Scouts in an assembly line & by Den (always Tiger / Bobcats 1st & then by rank, with Webelos 2's last) & their parents come through & pick up a FREEZER type Ziplock bag (thicker than a sandwich bag) select ingredients of their own choosing.  3 Scoops or spoon fulls of beaten egg mixture goes over / in last.

3.  Express out as much air as possible without spillage, seal top, write name on side of baggie, deposit into boiling water.  Average wait time:  5 minutes. 
4.  Retrieve baggie, set aside for 3 or 4 minutes with top open to allow for cooling.

5.  ???
6.  Profit.

Benefit is the Scout (or Adult Partners) can walk around with the bag in 1 hand, spoon in the other (no fork, will eventually end up with Scout puncturing the bag) & not need a lap or table for a plate... or you can dump it all onto a tortilla.
Pro tip:  Seal the bag to all but a small hole & drain the excess water that will inevitably show up.
