I have a 3.5, from the 70’s, in that shit avocado “green.”

I run dough in it at least once a month.

Been thinking about a new one, but we’ll see. Would be nice when hosting, or family gatherings to not have to mash potatoes in two runs.

Hang onto it.  It's probably better than anything you can get on the market now.  When they moved away from the metal gears the durability and reliability of the motors really took a hit.

For mashed potatoes, the food mill I posted above would be great for the really creamy stuff, although I just use a tater-masher and lots of butter/cream/sour cream.  I'd keep that old one and have it serviced/greased.

I sure won't be getting a new Hobart that I looked at just now. Not for no $5k. 😂

Worth it, but not for me at that price point.

From that review linked above, the Bosch seems to be the sweet spot pricewise if you're doing a lot of bread.

After many times of cutting up my fingers I bought some gloves that I know use.

Mine came with some type of thing that holds the victim and keeps your hands away. I make sure I use that when it starts getting within a couple of inches.

I think the only thing I own that worries me more is a jointer.

Mine did too, but it doesn't work that well. I did use it, but still managed to cut myself somehow. Love the gloves.

Watch it with that mandolin.

i still don’t have the food lab, its been on my wishlist for forever

Food Lab Cookbook is awesome.  Mandolines are the devil.  Use the plastic thing that holds the food.  "Oh, I'll get one more slice out of this cucumber."  RIP your finger tips.

Y’all know you can throw that last bit of veggie in the trash, yeah? I’ve never needed another slice of potato bad enough to slice my fingers up.

My process exactly.  I don't need to save 1" of a potato.

Or just have a bag in the freezer where you keep your stock carcasses and throw the numbin of veg in there for the next round of stock.

also cutgloves exist

These slicers are very good for business. The problem is they make a thin enough slice that you can't really attach it back to the finger.
