So, I went to Little Deli for lunch yesterday and got the Italian, as so many here and on Reddit have sung its praises.

TBH I just don’t get it… sure, it was good, but to me it doesn’t hold a candle to Home Slice. It all comes down to the bread, and if that isn’t fresh with a little crunch to it, you’re falling short.

I tend to agree on the Italian, but it doesnt concern me as I'm always ordering Harry's Perfect Pastrami when I hit up Little Deli

I fear this thread as I already spend too much time on this site.

I chose this thread because I made steamed Chinese buns, to make gau-bao sammiches, to use the pork belly I made too much of, in order to have pork belly to make an OG ramen which my daughters say they love. I have already put thirty hours into the broth.

What I learned is that after a 7-ish minute rolling boil on the bones and meat of the stock, you can pour everything into a strainer, wash the animal parts, and start over, which eliminates the need to skim the stuff that rises to the top whoever I make a broth the Euro-centric way.

Maybe this is common news on this thread. If so, apologies.

Thanks go to my wife for only eating half of her NY strip the other night. Rewarmed that in the oven, added some chopped grilled onions, two slices of provolone and a healthy slather of horseradish sauce. With a side of salad and more steak. Fucking delicious.

I haven’t made this yet but I saw it on r/Food and thought, “Duh!” What a simple idea to make a jalapeño popper sandwich. Have you tried something similar? It’s kind of obvious. You could also easily work a fried egg into it or embellish it in other ways. But I think this is a nice pic and out of respect for OP Beth Pierce I’ll post her recipe. But just looking at the pic you can easily figure out how to DIY and maybe come at it from different directions to achieve the same result. But that looks awesome. Some more bacon wouldn’t hurt.

The recipe:

Ingredients

•    ⁠2 Jalapenos sliced lengthwise seeds and membranes removed
•    ⁠4 ounces cream cheese
•    ⁠4 slices bacon crispy cooked
•    ⁠2 slices monterey jack
•    ⁠2 slices sharp cheddar
•    ⁠4 slices Italian bread
•    ⁠Cilantro chopped (optional)
•    ⁠Pats of butter

Instructions

1.    ⁠Preheat oven to 375 degrees.
2.    ⁠Stuff each jalapeno half with approximately 1 ounce of cream cheese. Bake stuffed jalapenos on a baking sheet for 25-30 minutes. Remove from oven.
3.    ⁠Place 1 slice each cheddar cheese on 2 bread slices. Place 1 slice each Monterey Jack on 2 bread slices.
4.    ⁠Each sandwich will have both kinds of cheese. Slice the cooked stuffed jalapenos into bite-size pieces. Divide the jalapeno slices between the 2 slices of bread with cheddar.
5.    ⁠Add the 4 slices of bacon to the slices of bread with the Monterey Jack.
6.    ⁠If desired, add chopped cilantro to one side. Combine the slices of bread to form 2 sandwiches.
7.    ⁠Top each sandwich with several pats of butter. Place in skillet over medium-low heat, butter side down.
8.    ⁠Top with more pats of butter. Now grill each side until lightly browned. Cheese should be melted and gooey.

30 hour sous vide eye of round, seared and thinly sliced, Boars Head white American, James River BBQ sauce, and Duke’s on a grilled HEB bakery onion roll.

Tasted way better than the potato quality picture.
