Soup, Stew, Chili, Gumbo (Cold weather eats)

I wanted to mix things up a bit tonight since we’ve gone through gumbo, chili, tortilla soup etc recently and we hadn’t made anything new in a while. I saw this recipe pop up the other day for butternut squash, kale, and farro “risotto” and decided to give it a go… it will definitely be made again. Very hearty and rich but incredibly simple to make in about an hour.

My Texas Red (with a little chicken added bc my family doesn't digest beef well over several days and I didn't shoot a deer yet)

3lb course ground Chuck

2lb ground chicken.

6 Guajillo

4 New Mexico Chile

2 Ancho

Tsp Chile Arbol ( my wife is from Cali and a  spice wimp)

2 Japs

2 yellow onion

.5 sweet onion 

1 head of garlic diced

1.5 oz dark chocolate 

3 tbs cumin 

1 qt beef stock plus 2 qt water 

Tonys, Texas Red Fajita seasoning each batch of browned meat to taste.

 

Brown meat in batches; sweat onions and toast garlic and cumin. Boil and blend dried chiles.

Serve next day.

 

No beans; no tomato, no oregano, no noodles.

Simple.

Not recipe specific but wondering if anyone uses cream cheese instead of cream\half and half for creamy soups?

Have a recipe from mindfull mom for southwest turkey soup that is very good that uses cream cheese. Also I use turkey bones for broth for the soup. I use insta pot and my “broth” turns into turkey jelly there is so much collagen in it. 
 

Not going to post link cause you losers can search mindful mom on your own. Plus I’m lazy.

I use cream cheese for thickening a cream sauce for one of my salmon recipes.  It takes quite a bit of manipulation to work the softened crean cheese into the liquid.   In afraid it would be difficult directly in a soup.  I think you would have to make a sauce mixing the cream cheese with heavy cream or half and half first and then add it to the soup.
