I wanted to mix things up a bit tonight since we’ve gone through gumbo, chili, tortilla soup etc recently and we hadn’t made anything new in a while. I saw this recipe pop up the other day for butternut squash, kale, and farro “risotto” and decided to give it a go… it will definitely be made again. Very hearty and rich but incredibly simple to make in about an hour.

Some stock, some veg, and a Costco rotisserie chicken = damn good eats on a cold winter’s night. With a rustic bread on the side.

My Texas Red (with a little chicken added bc my family doesn't digest beef well over several days and I didn't shoot a deer yet)

3lb course ground Chuck

2lb ground chicken.

6 Guajillo

4 New Mexico Chile

2 Ancho

Tsp Chile Arbol ( my wife is from Cali and a  spice wimp)

2 Japs

2 yellow onion

.5 sweet onion 

1 head of garlic diced

1.5 oz dark chocolate 

3 tbs cumin 

1 qt beef stock plus 2 qt water 

Tonys, Texas Red Fajita seasoning each batch of browned meat to taste.

 

Brown meat in batches; sweat onions and toast garlic and cumin. Boil and blend dried chiles.

Serve next day.

 

No beans; no tomato, no oregano, no noodles.

Simple.

Not recipe specific but wondering if anyone uses cream cheese instead of cream\half and half for creamy soups?

Have a recipe from mindfull mom for southwest turkey soup that is very good that uses cream cheese. Also I use turkey bones for broth for the soup. I use insta pot and my “broth” turns into turkey jelly there is so much collagen in it. 
 

Not going to post link cause you losers can search mindful mom on your own. Plus I’m lazy.

I use cream cheese for thickening a cream sauce for one of my salmon recipes.  It takes quite a bit of manipulation to work the softened crean cheese into the liquid.   In afraid it would be difficult directly in a soup.  I think you would have to make a sauce mixing the cream cheese with heavy cream or half and half first and then add it to the soup.

Cold and windy in Amarillo today. So far we have 9.5 inches according to the weatherman. Great day for a soup or stew. Wife made chicken and dumplings, I’m full as a tic, so damn good!

Got two comfort dishes I'm planning on cooking this weekend. One is Chili, the other, since I'm trying to get back into Keto, is a cauliflower soup that hopefully will come out similar to a potato soup. After we made some homemade cauliflower mash for christmas dinner, I'm actually pretty bullish that its going to turn out well. 

So two recipes on deck, but that didn't stop be from looking at that shrimp jalapeno soup and think "hmmm."

Feeling blah after travel (went to the doc, have an upper respiratory infection). Wearing a mask (I’m not a dick), I hit MT Supermarket for some soup fixings to make an Asian chicken soup. Made it, it’s great, no pics.

BUT…I decided to try this stuff:

I never do canned stock, but we just got back yesterday and I’m tired. This shit is for real. Legit chicken stock. A real richness, good flavor. I’m actually going to start keeping some on hand.

Tonight was bacon wrapped, boudin stuffed pork loin, pintos, cornbread, maque choux, potato salad and sausage.  Tomorrow is beef stew and then it's leftovers for a day or two.

Ha, my wife randomly made that Hungarian mushroom soup for Christmas Eve and it was great. I always make a family recipe of Hungarian paprika chicken and this went well with it. Might be part of our annual tradition now.

I think I may have posted before but this is the boss of my cold weather stews.  Segedin (or Szekly) goulash, a Slovak-Hungarian concoction of deep brilliance and flavor, pork slow simmered in paprika broth and finished by adding sauerkraut.  The keys are:

1. Tons of good Hungarian paprika-  I use 4 tablespoons per 1.5-2 pounds meet. 
 

2. Rinse and drain the kraut before adding it to the pot for about 20 minutes. 
 

This will sit in the fridge for a while so it’s at its best.  Served hot with a huge dollop of rich sour cream.

I love the idea of pork and paprika but my family is very German and weekly meals of sauerkraut as a kid has ruined it for me as an adult.  Can you make the dish without it or sub in something that doesn’t smell like Oma’s breath?

That’s just regular goulash. You can also use beef.

Not too shabby. Simple enough to prepare. I loaded a scoop of rice in the bottom and served with a crusty baguette.

I did  follow the recipe linked above pretty much as written, using two whole jalapenos (with seeds). First taste was a little flat, but adding some more salt and 8-10 healthy dashes of habanero hot sauce seemed to wake it up nicely.

Made this tonight. Tasty and pretty easy. Like Blotto, I thought it was a bit flat and needed more salt than just “to taste,” and next time I’ll add a few dashes of hot sauce.
