I must second this list of additions.   Parisa is an intriguing dish.

36/36. But as others have pointed out (I’m late to the party), some are definitely not strong Texas-origin things. And I can’t say I LIKE everything on the list. Just that I’ve had it.

Ya know, I’ve had tons of rabbit, but I can’t specifically say I’ve had fried rabbit. I assume I have, and it just wasn’t something I considered unusual so I didn’t make a memorable note of it. So either 35 or 36

24, and I'm a picky eater.
I had to think about the Homemake Ice Cream question.  My grandmother had this bucket thing with a crank that you had to put rock salt into, so I'm saying "yes."

That’s exactly what homemade ice cream is

Yep 36/36. Would add:

Dove

Quail

Prickly Pear Jelly

Rattlesnake

Nopalitos

CHIEF

5 for 5 on those too.  Not a fan of the nopalitos, but yeah, there's a bunch of Tex-Mex stuff that could be on the list.

Dove and quail fries with family and friends are some of my favorite memories.

I'd be n-1/n if you added cooter's very good additions to the list. I don't think that I have ever had dewberry cobbler.

I would add further three items I haven't seen to the list:

cabrito

carne guisada

carnitas

100%, A+, whatever. But what does half of that list have to do with being a Texan?

Food is one of the most, if not THE most, important defining aspects of culture.

That's a really superb list.  There are a few very good differentiators. Went through it just now with my daughter, and was pretty surprised how many of the non-alcohol items she was able to check off.  Solid Willie Nelson level.

plus everything (I think) in all the added lists, although I'm not sure what "King Ranch Casserole" is, and I've never had fried squirrel, that I know of.

My addition: Allsup's burrito.

As a kid, we used to hunt rabbits and squirrels on my grandfather's farm. Grandma would fry up the rabbit, but she wouldn't touch those "tree rats" with a ten foot ladle.

I agree with the raspa but iffy on Nilgai.

I think maybe a Vietnamese style crawfish boil should be on there too.

Also fried cornmeal coated bass and perch.

+ 1 on the bass/perch

Fried snapper throats would be a strong contender, too.

if your granny called it blackberry, that's just fine. It was probably dewberry.

Meanwhile, if you haven't had cabrito, turn in your Texan card. That's just bullshit right there. No cabrito, you're not a Texan.

West Texas thing...

Almost every little town has an Allsups.  I've compared the burritos with the JITB 2/$1 tacos for being a grotesque, yet slamming hard delicacy.

Well god damnit, why didn't y'all just say so.

Wait, does not knowing the difference mean I lose my card?

No, it just means you haven't spent as much time in rural East Texas, where that dewberry nonsense started. It's blackberry to those of us whose German grandparents in the Hill Country knew what the fuck to actually call it.

Intrigued.  I'm assuming the difference is the boil spice and veggies included.
