Cocktail Hour:

Cider Whiskey Sour

Dinner:

Buttermilk brined turkey

Brioche stuffing with chestnuts and figs

Fiery sweet potatoes (basically mashed sweet potatoes made with red curry and coconut milk)

Cider-glazed brussels

Cranberry-orange jelly (Port, Grand Marnier, and fresh cranberries molded into Darth Vader (fingers crossed it comes out))

Parker House rolls (scratch)

Galatoire's sweet potato cheesecake

Wine (Not sure which ones yet)

I might be by myself with the dogs (might have a neighbor or two pop over), but I will eat well.  Fuck COVID.

Sweet Potatoes

Chess Cake (also my grand mother's recipe)

My aunt has a solid recipe, but we won't be getting together with that side of the family throughout the holidays (COVID).

jealous...what kind of fish?

We have a mix of shit that's been caught by the participants (blue gill, crappie, northern pike) and some cod/whitefish that was bought at the grocery store.

The bluegills especially are delicious, but it's a lot of god damn work to get the meat off those little bastards.  Thankfully I don't have to prepare it, I just have to bring beer.

I should mention that these fish were all caught and cleaned this summer and have been in the freezer since August at the earliest.

I despise the damn things

Ha...I've never had one I really liked a lot that wasn't made by my grandma or mom.  Everything else we eat is traditional as hell so I figured it was a TDay staple for everyone.

I think of it as a "family gathering" thing, but not specific to Thanksgiving.

Standard stuff (smoked turkey breast, smoked ham, dressing, gb casserole, m&cheese, asparagus, rolls, deviled eggs, cherry & pecan pie. Plus a couple other sides from the DIL. The smaller pecan pie is for a neighbor.

Deviled eggs get topped with the paprika tomorrow.

Went to the HEB today with absolutely no plan, just looking at what was around that looked good.  But I'm definitely out on turkey, because turkey sucks.

I found a 3-lb cowboy ribeye.  That'll do.

And then there were jambalaya-stuffed chickens.  That'll cover the poultry needs of anyone in the family who favors bird.

Aside from that, we'll have bacon & balsamic brussels sprouts, mashed potatoes, mashed sweet potatoes, rosemary sausage dressing, and some apple pie for dessert.

Wine is a 2007 Michel-Schlumberger Merlot and a 2012 Stag's Leap Cabernet.  Dessert wine is a port that I still need to pick up at the liquor store.

Just the two of us, but fuck it we are going all out. And eating leftovers for days and days.

Specialty cocktail:
Smoked rosemary Negroni

Menu:
- Oven-roasted turkey, using Alton Brown's wet brine preparation
- Savory Sweet Potato Casserole (think browned butter and sage flavor profile)
- BLT oyster stuffing
- Green beans, with a shallot/butter/white wine sauce
- Mac n cheese, mimicking the Luby’s recipe
- Roasted Brussels sprouts (nothing fancy - just olive oil, salt, pepper)

Dessert:
- pumpkin pie ice cream pie (made yesterday, pictured below)
- cranberry-pomegranate mousse pie

Here is the ice cream pie

Normally we have a full house and host international students and single folks and serve a traditional meal with turkey and a lot of the dishes prepared above. Due to the plague happening, we are down to immediate family and reduced further as our Cali girl is going to stay put due to concerns about travel.

So, I asked the remaining family what they'd like and they came up with this plan:

Drinks are going to be varied but we have a full pantry so that may be determined later.

Duckling

Mashed potatoes

Dressing

Green beans, not the casserole--they hate that

Cranberries

Homemade rolls

Pumpkin pie

Day two will have the leftovers plus I will be adding sweet potatoes as the 'new dish' and probably another cream pie or lemon pie. If I have sweet potatoes left over then they will go in a pie, too. If the duck is consumed completely on day one, then we have a beef rib roast that will augment the sides.

Packaged as requested & ready to go in the fridge for kids to pick up. Saved 4 for us. Pie too.

Sister is doing the Turkey. I did the double-smoked ham on the BGE. Injected with maple syrup for 24 hours in fridge. Smoked for five hours at 250. Brown sugar and honey glazed for the last hour of the smoke.

Mrs. Tailgate is doing the classic green bean casserole.

Happy Turkey (and ham) day you crazy mofos.
