Thick slices, about 18-20 mins at 425, no turning. But here’s the key - start with a cold oven. That brings the bacon up to heat more slowly and more efficiently renders the fat. I just did a batch for brunch, it was perfect.

Cooling rack or no?

I haven't been driving much so I haven't been keeping close track of gas prices, but today I stopped at a Valero to fill up and their 93 octane grade was $3.05/gallon. (My car actually does need premium.) Their 87 octane was $1.95.  So the premium was $1.10 more a gallon than regular. That's insane. I needed gas so I put a few gallons in, but I didn't fill up like I planned.
I've noticed this disturbing trend over time, of the premium grades everywhere being priced higher (relative to regular) but I've never seen a difference anywhere near a dollar a gallon. When I was a young man, it was a consistent rule of thumb that there would be a $0.10 difference between each grade--so if 87 was $1.29, 89 would be $1.39 and 93 would be $1.49. Why is there such a monster price difference between grades now?

A lot of factors go into the price increase, but I agree it has gotten out of hand. It also pisses me off that many stations don't show the price of premium on their sign so you don't know until you commit and are already at the pump.

When I do my bourban bacon I use a cooling rack on the pan during the baking.

Jalapenos.  WTF?  The ones in bulk at my HEB look more like Poblanos.   It would take a case of cream cheese and a side of bacon to wrap 'em.   Kinda a PITA to dig out the smaller ones but I'll continue to dig 'em out.

Himalayan Pink Salt.  Why must salting my food be a two handed operation?

My FIL is full of crazy dietary bullshit, that I could go on and on about, but my personal favorite is his contention that "regular" salt like Morton's actually doesn't provide any dietary benefit.  According to him the salt in that salt isn't really salt because it's "processed".  So I guess most of the population isn't getting enough salt in their diet because they are eating fake salt.

You’re missing out. Nothing beats freshly ground black pepper.

Well, I can think of a couple of things. The first swallow of an ice-cold beer on a hot summer day, for example.

SIAP

Neighbors that don't retrieve their trash bins from the curb, on same day they were emptied.

This really pisses me off.

And of course, 2 of my neighbors are the offenders on my 8 house street.

Ours are emptied on Wednesdays, about 7:30a.....I'm looking outside, and their bins are still at the curb, blown over.....and 1 fucker just left, and had to avoid his to get out of his driveway.

If I was you I'd just go by Slyster. They might even spell it wrong and wind up with Sylvester.

I don't understand why people censor the faces of children. Wife showed me a post from our neighborhood's facebook group concerning a student ID found on the ground. They censored the kids entire face. How the hell are we supposed to help identify the child or the parents of the child if we can't see what they look like? Every single elementary kid looks exactly the same.

Does anyone recognize this man? He was walking near my house and I think he dropped something. Please help me identify this person

Hope he’s throwing back the skrimps so he doesn’t get a goiter.

It seems like every business wants you to take a survey these days. They hand you a receipt after circling the info to take survey and push this shit in you. Happened today at office max. Fuck off you fucking

What pisses me off more than this?  Why do I have to hit an extra button to tell automated gas stations that I don't want a receipt?  Shouldnt default be to no and the weird people that say yes should go through more steps?  It's 2021...make paper pushers press extra buttons somehow, not regular people.

Want covid and salt?  Cuz I'm here to make sure you have to touch every single square inch of this salt shaker with two hands.

I got talked into adopting a cat.

I've never seen anything like it before in my life.  I'm jumping through fewer hoops to refinance my house.  An effing home visit?  What do they expect to find?  A cat processing facility.  I actually had to answer the question, "Where is the cat going to sleep?"  Fuck if I know.  It's a cat.  I just had to call my vet to give them an ok to release our current pet's medical information.  I'm not trying to be a bitch and I get that some animals mistakenly get placed in shitty homes, but it's a rescue cat.  The fact that I'm probably going to have to pay $100+ should be enough of a qualification to let you know it's not going to be eaten.

I'd of said, "I know where its by god not going to sleep"

It's only appropriate when used as "neither wester nor easter"

Nah it's applicable when it's a storm blasting for the north east that's gonna fuck property, boats, and the coast line up.

Why ?

1) it arbitrarily shortens two words to sound cool but actually sounds stupid 2) it's actually harder to say/type than the real words 3) I get agitated easily at stooped things.

It's a shortening of the words based on the spoken language of the region/history long before shortening words, and phrases was a thing.

Old English naval terminology is filled with that kind of phrase.  Nothing arbitrary about it in my opinion.

My original response:  "So, if we say "y'all better axe somebody" for long enough, it's ok?  Axe is also a huge pet peeve.  No racist.".

Then, I realized how hypocritical that statement was.  Either way, saying/typing/reading Nor'easter still annoys me.

Not in my opinion because axe is not in any way shape or form ask or similar to the shortening of north to nor.  Axe is just poor grammar.

And it's totally fair if it bugs you. It's all personal choice. Having grown up on the east coast the term Nor'easter has a very special meaning to folks who've experienced it's fury.  Just ask the sailors on the Edmund Fitzgerald : ).

That also brings up, people who talk on speaker phones in the airport and talk on the phone on the driving range.  I think I am just surly this morning from being cooped up all weekend chasing a 14 month old.

Yes to both of those any time other than in your own private space.

I'll tell ya what would make me surly... chasing a 14 moth old around...

Actually no, I can't even begin to describe how much I miss growing up with my kids around.  It passes as quickly as anything you'll experience in life.

How fast can a 14 month old run?
