Probably true. But that is a cardinal sin in this industry, and the guy running their pits has been around long enough to know it. When I started Buck's, I didn't use pics from Pappa Charlies (even though a bunch of the stuff we had pics of was food I cooked). I took my own damn pics of my own damn food and had those posted to my site and sm platforms. And as our business has matured, we've updated the food pics a number of times. About to do it again, too. Ain't hard. Hell, I'm borderline retarded and even I could figure that out.
 
 


How insensitive of you, sir! Are you trying to suggest that the borderline retarded are incapable of turning out pics of quality bbq that they have pilfered from other sources?

Not to mention the longhorn logo.  White Oakleys and county fair “cowboy hat” were legit though.

What’s up with JM at Black Box? All his cookers and trailers are gone, the only trailer on the lot was a different serving trailer. All “Black Box” signage was gone and a banner saying John Mueller BBQ coming. Can’t imagine things not going as planned for him.

He was tweeting the other day about some construction going on but that he was cooking.

in a pinch on Sunday and was more or less forced to pick between Blood Bros and Goode Co for bbq.  Obviously, went with Blood Brothers. I had ribs, brisket, sausage and some of their special of the day pork belly burnt ends.  I have been pretty unimpressed with their que the previous times I have gone.  YEsterday was much batter.  Meat has more smokiness to it, and they are getting their ribs dialed in pretty well.  Their sausage has generally been very good.  It's not the greatest, but they do seem to be getting better.  WIsh champ was still close, or Feges had reasonable hours, or pit room was on my side of 59.

I ate here a couple weeks ago and wasn't impressed at all.  Place is priced the same as more well known joints; didn't think the food had any smokiness to it.  Most of my friends said it was okay, but didn't like the price they paid compared to others.  FWIW Slow Bone BBQ (not on Top 50) should be in any Dallas Top 5 list and way above Blu's BBQ.  Had lunch there again today.

Had Pinkerton’s last Friday. Maybe the first time in a3-4 months. It was fantastic. This picture sucks as it looks like the cut was too fatty or it didn’t render, but I assure gig that wasn’t the case and there wasn’t a scrap of meat left on the tray after my brother’s and pops were done. Loaded us up on burnt ends too. Maybe because we all had UT gear on.

Last Wednesday I got a chance to try City  Market in Luling and I was impressed. I had heard some rumblings about quality decreasing, but the brisket was solid and sausage was good. I'd give it a 7.5/10 overall. The ribs were probably the low point, maybe a 6/10 pork rib, not tons of meat on them, and nothing really stood out. I usually try to take the "back roads" to the RGV when I drive from Austin, which means I've made a lot of stops at either Black's or Smitty's in Lockhart, but City Market earned itself a spot in the rotation.

Back when my parents lived in Lockhart and I got to eat at those places more times than I could ever possibly recall, LCM was always the best of the best when they were "on".  There was a hierarchy for me that went something like this amongst the Lockhart places + LCM:

Smitty's - they were always the winner for me, not because they ever put out the absolute best BBQ, but because they were always the most consistently very good.  If they put out their absolute best food, it was always a tick below Kruez or LCM.  

Kruez - not as consistent as Smitty's, but their best effort, to me, was a bit better than SMitty's.  the issue was their best effort seemed to have a hit rate of about 1 out of 4 times.  That said their worst food was never that bad.  

LCM - If they put out their very best, they were the very best and it didn't matter which protein.  Brisket, Ribs, sausage, their best was the pinnacle of BBQ at that time.  However, they were wildly inconsistent, and their worst food was by far the worst of the lot.  Just inedible at times.  I could never figure out how they could vary so wildly from visit to visit.  This would really piss me off when I would forgo Smitty's 3 minutes from my parent's place to drive 20 minutes away, wait in line, drive back home, and get them on a day they were "off". 

Blacks - they were just consistently average back then.  I think they have elevated themselves a bit since then, but they were never the leader there.  

 

The period I am referencing was the 10 years from 2005-2015.

"Consistently good" is pretty much why I kept going back to Black's & Smitty's. LCM seemed to be a notch above that earlier this month, I enjoyed it.

Related: I went to a BBQ festival in Tyler in May that was pretty damn great, Pinkerton's, Snow's, Leroy & Lewis, Brotherton's were all there (every booth made a sample-sized entree and sides, some had desserts. I thought many were great, but by far the only booth with a "line" was Black's BBQ. Every other booth had maybe 3-4 people waiting at most, Black's had 15-20. There was tons of booths and it wasn't completely packed, so it wasn't bc of a lack of options or anything. They definitely have achieved a legend status at this point, even if I don't see how they're necessarily better than any of the other spots that I listed.

It was a learning experience, one of the reasons why I never cared for Lockhart.  I make no apologies for working at Church's, changed my life, met the wife through them, still married 35+ years.  I wanted to run a business and Church's had a program where Mgrs. could eventually buy their own store, but after a close friend passed away, I decided to get out of it and went into the High Tech/Semiconductor route.

So, here is the thing. I love Pinkerton’s and have enjoyed my visits to Blood Brother’s...but I am not paying $3 for a big red. Especially a corn syrup big red. These places know it’s in demand and try to charge out the ass for it. Maybe it should have just stayed a south Texas thing. I did have a HEB wild red with a barbacoa taco last week down in Rockport.

You either sneak in your own or bite the bullet and pay the $3. Your penance is to eat at Bill Miller's or Dickey's twice this week.

But to demonstrate that my fandom is also flawed, I'll begrudgingly admit that Big Red and Wild Red taste the same to me.

Not going to lie, even at my age I think about getting back into it.  But I love my hours/schedule and really don't want to deal with shitty workers stealing from you, not showing up for work.  This shit could be its own thread.

Is Big Red a south Texas thing?  It's from Waco.  Growing up in Austin in the 70s and 80s, we always had it at BBQ restaurants.
 


None of the Houston folks I know drank it with bbq. And there bottling and I guess headquarters were in San Antonio for a long time. I guess it got associated with south Texas and certainly with bbq and barbacoa. But I can’t speak for Waco because that place sucks ass and I avoid it like the plague.
