I had the Buck's version based on the Stabby recipe and concocted a version based on that.  It's close by my taste buds.  Sort of like the loaded baked potato of squash.  There's a picture a few posts up from the recipe.  I backed off on the amount of cheese since I made it that time.  I adjusted the recipe to what I currently do, which is 1.5 cups of shredded cheese instead of 2.5 cups.  It's creamier with that revision and closer to what I remember.

The words magnificent bastard come to mind.

 

It's not quite as easy as the Futureman steak though, i.e., take the raw steak out of the butcher paper, put it on the plate, and eat it.

did I ever post that?  my mom actually used to do that with sirloin, no lie.  just add salt and pepper.

Pinto Beans in the instant pot. There was a discussion on some thread around here recently. We all do it a little differently. I like to soak beans and add a ham hock.

No (at least not that I can recall).  But you've shown a preference toward the wound it, wipe its ass, and drag it by version of rare in the steak thread on a few occasions.

Unless you have an old bombed out building that is barely up to health code, Brick & Mortar is a tough bet in the BBQ game.

This and it's going to get a lot of joints in the near future if you ask me.  Not sure what they can do but pricey cuts are going to get some of these bbq joints.  Pulled pork and chickens need to become more of a focus.  I'm surprised more BBQ joints are limiting their brisket days to maybe Friday and Saturday. I think the bubble is bursting on the Texas BBQ scene to be honest. It's been a hell of a run for years.

Fajitas say "hi."  My 87 yr old dad has a whole rant about it -- "I used to buy them for 29 cents a pound before those assholes at Chili's went and made them popular with gringos."

Cheap/throwaway stuff (that is often the food of poor folks/minority cultures) gets discovered and becomes expensive:

- smoked brisket (used to be for country/rural folk, at the local market/butcher/bbq joint)

- chicken wings (cheap bar food for yankee yahoos)

- ox tails (an african american staple)

- fajitas (served by the platter full at countless mexican backyard barbecues until they got expensive in the early 80s)

- tacos in general (I'm looking at you fuckers at Torchy's)

And the list surely goes on and on.

Just an educated guess: The dark meat is a function of exports to China, and the Chinese prefer dark meat. Wings are a function of the US demand for restaurants serving wings.

I like brisket just fine, but when it starts competing with steak price-wise, steaks win out every time with me.

First fajitas I had were at La Vista at the Hyatt Regency Austin, which was among the fanciest hotels in Austin at the time.  Server after server bringing out the piping hot comales, delicious fajita steam wafting through the lily-white clientele on the second floor of the Hyatt.

That was one of our go to special occasion restaurants when I was a kid. I remember thinking those fajitas were heaven sent.
