I was similarly underwhelmed when I made my first trip there this past November.  Beef Rib was delicious (LaBBQ was better by a lot), but the brisket was awful with no bark.  Sausage was meh.  I posted about it.  Your slice of brisket looks better than mine did.

Yup. I remember when I got reamed 4-5 years ago for saying City Market, Coopers, Salt Lick, Louie Mueller, Blacks, Kreuz, and Smittys were all shit compared to Mickelthwait, Franklin, Truth, etc. 

 

And yes, id include Snows in that list of places that dont hold a candle to the new school spots. But people tend to pimp that place because of a female pitmaster and the fact that no one wants to wait in line for 6 hours and realize they could Uber Eats better cue (at least I can uber eats better cue from 3-4 different spots).

Went to Pinkerton's spot in SA last Thursday for lunch. Ribs were on point as always but the brisket was not the best I've had from there. I'll chalk that up to it being a tiny brisket that when they pulled it out it only weighed 3 lbs and the "moist" end tasted like a normal flat. Jalapenos Sausage was fantastic as was the duck/sausage jambalaya side.

I've never had a particularly good food experience bbq wise there, going back 5 visits and a decade - much of those with LM being the second stop in a mini bbq trip with Snows for people who hadn't been there before.

I think it's very telling that every time I see someone go there now from the bbq people I follow they almost always only order the beef rib.

Again, know a ton of people has great experiences and love it. I just haven't. Sub par bbq, sub par sides and some of thr absolute worst cutters in BBQ (training issue)

I believe most people would say that there’s no discussion to be had regarding Wayne vs John. According to John, Leann could cook. I don’t recall him ever saying the same thing about his brother.

That's my go-to.  It's almost always delicious.  I'm not sure why that doesn't translate to the brisket.  And, I put a lot of emphasis on the "ambience", which LM has in spades.

I would tend to agree but maybe someone here loves Wayne? John would have known more than me on both points as would you sounds like.

John really was the last of that old old breed in a lot of ways.

LM beef rib is definitely the best thing on the menu and used to be relatively uncommon at other places.  Beef ribs are on menus all over the place now, so not such a special item.

I don't go out of my way to eat at LM, but if I'm in Taylor around lunch time I usually try to stop.  LM and Smitty's are my two favorite old school barbecue locations for the history and vibe, unfortunately not for the barbecue.

On a side note, I cook up a batch of LM/John Mueller barbecue dipping sauce when I make beef ribs at home.

Yup, Smitty's is my other top vibe spot, but unfortunately their food is pretty uniformly bad at this point.  And, for me it's a farther drive than LM.

Recipe?

I have it jotted down at home, but here are the basics:

3 parts water to 1 part ketchup; roughly chopped onion; some beef bullion; kosher salt and 16 mesh black pepper to taste.

Bring to boil, boil to reduce to about half.  Check salt and pepper seasonings, I tend to lean heavily on black pepper.  Simmer for a while longer.

Yes. 3.22 lbs post cook and I'm not even sure how. It looked like a competition cut brisket and the cutters were also shocked by the size. Surprised they even served it and didn't put it to the side for the addon for mac n cheese.

Recipe?  I've been playing around with thin, vinegar sauces for pork ribs and had some good results over the weekend.  But I'd like to see what this one looks like.

Well, first it was JM, then John Lewis.  After that, I lose track.  I don't know if hired is the right word, but I don't think she ever was working the pits.
