For years, Stanley's sourced meat through Country Meat Market in Tyler.  It's a good business, but they sell Black Label Reserve Beef, which is "high choice" (top 2/3 choice).  I've never been disappointed with what I buy there, but I'm not trying to sell brisket.  A couple of years ago, they switched to Cut Beef, a local ranch.  Pasture raised cattle, but I presume not graded.  I gather they couldn't keep up with demand.  44Farms has been a change for the better.

I've had two good meals at the Dallas location, but I'll never go back to the Waco location.  Really subpar plate of food at that location.  A lot of the Austin brisket apparently is cooked at the Lockhart location and trucked in these days.

The last time Pecan Lodge was top tier was a decade ago in the farmers market.

Wife and I taking our annual spring trip to check out the old stomping grounds in San Marcos and spending the weekend in Wimberley, which means lunch tomorrow on the way up will be my once-a-year visit to City Market. Yes, there are plenty of better BBQ joints, but I still enjoy CM for what it is and it's tradition at this point.

Yep, while their brisket is totally skippable and sometimes downright bad, CM ribs with their red glaze are still a treat. 

Always grab a few bottles of sauce to go for friends/co-workers.

Terry Black's in Dallas is fine for a no-line place based on my anecdotal experience.  But it's going to suffer to a degree from being a chain at this point.
